Russian Cheese Pancakes (Syrniki)

This dish for chicken legs in a sweet and sour sauce is wonderful. On grilled or baked chicken, it tastes excellent.

Ingredients

  1. 1 egg
  2. 3 tablespoons white sugar
  3. 1 cup quark, well drained
  4. 5 tablespoons all-purpose flour, plus extra for dusting
  5. 1 ½ teaspoons vanilla sugar (Optional)
  6. ¼ teaspoon salt
  7. oil for frying

Instructions

  1. Beat egg and white sugar together in a bowl until smooth. Whisk in quark cheese, flour, vanilla sugar, and salt. Mix well until dough is thick and sticky.
  2. Divide dough into 5 to 6 portions. Form into balls and coat with some flour. Flatten slightly to form into discs (syrniki).
  3. Heat oil in skillet over medium-low heat. Add the syrniki; fry until browned, 5 minutes per side.

Used tvorog , not quark – a type of farmer’s cheese.

We substituted sour cream for quark cheese and just added more flour to the mixture (to make it thicker.) Sooo good.
