Raspberry and Apricot Smoothie

Ingredients

  1. ¾ cup raspberries, or to taste
  2. ½ cup plain fat-free Greek yogurt
  3. ½ cup crushed ice
  4. 1 apricot – peeled, pitted, and chopped
  5. 2 tablespoons honey
  6. 1 tablespoon flax seeds
  7. 1 tablespoon lemon juice

Instructions

  1. Blend raspberries, yogurt, ice, apricot, honey, flax seeds, and lemon juice together in a blender until smooth.

Flavor was good but not crazy about all the seeds in raspberries! Apricots were either not in season or store was out of them so I substituted canned apricots for fresh!

I thought this was okay. It does have that tangy taste to it, for some reason, as suggested. I made 1/2 recipe. I only had frozen raspberries, 3 dried apricots, and vanilla Greek yogurt, so that is what I used. To puree the raspberries, and their seeds, I first blended them in 1/4 cup of water. I then added the apricots, blended them thoroughly, and then added the rest. My only change at that point was cutting the honey amount in half due to using sweetened vanilla vs. plain unsweetened yogurt. I don’t care for lemon juice, in smoothies, so I left that out. I am glad, because the smoothie already had a slight tart like bite.
