Ingredients
- 1 ½ teaspoons vegetable oil, or as needed
- ½ cup half-and-half
- ¼ cup canned pumpkin purée
- 3 large eggs
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ¼ teaspoon pumpkin pie spice
- ¼ cup finely chopped walnuts
- 8 slices day-old bread
Instructions
- Lightly oil a skillet and heat over medium heat.
- Whisk half-and-half, pumpkin purée, eggs, cinnamon, vanilla, and pumpkin pie spice together in a bowl. Stir in walnuts until evenly distributed.
- Place 1 slice of bread into the bowl and let soak briefly. Lift bread up to let excess liquid drip back into the bowl, then transfer to the hot skillet. Stir pumpkin mixture to redistribute walnuts. Repeat to soak and cook remaining bread, cooking in several batches if necessary.
- Cook each batch until golden brown, about 3 minutes per side. Serve warm.

Mild pumpkin flavor that is complimented by the walnuts and other ingredients. I thought the flavor was nice for a change from the usual French toast. I used Challah bread and would make it again.
I didn’t use half n half (didn’t have any). I used Vanilla Coffee Creamer instead. Also, used pecans instead of walmuts (same reason). It was delicious!!!
Tripled the ingredients, added one additional egg (3), 15oz can of pumpkin, extra vanilla. Used Texas toast.

I would suggest a little sugar to sweeten up pumpkin mix. Use whip cream for topping.
Yes, very good! I just used a heaping teaspoon of pumpkin pie spice rather than cinnamon. I didn’t put nuts in the batter but rather topped the french toast with pecans before serving. You could definitely taste the pumpkin pie spice, but not really the pumpkin puree. It was still a nice, rich treat though!

This was wonderful with sour dough bread! Served with bacon! Lots of bacon! I also used almond milk to make it non dairy.
The pumpkin flavor did not come through with these. Tasted a little bland.

I made this for Thanksgiving breakfast and the only thing right is add more pumpkin spice/cinnamon, perhaps a bit more pumpkin. We loved it and what we had leftover, I bagged and froze. Easy to put in toaster and yum.
supplement to my original review.. maybe use pumpkin bread….that would surely give a full pumpkin flavor..good luck

I found the mixture so thick it was hard to get a clean sear on the toast. I tried it several times in different pans and heat levels. I just couldn’t get on board with this. My family says the taste is “fine”. Fine is not a compliment to me when cooking

I made as it minus the pumpkin pie seasoning, I really think that would have been too much spice and taken away from the pumpkin flavor. Definitely will be making these again!!
