Ingredients

  1. 1 cup old-fashioned oats
  2. 1 cup cottage cheese
  3. 2 eggs
  4. 3 egg whites
  5. 1 teaspoon honey
  6. 1 splash pure vanilla extract, or to taste
  7. 1 pinch ground cinnamon, or to taste

Instructions

  1. Preheat a waffle iron according to manufacturer’s instructions.
  2. Blend oats, cottage cheese, eggs, egg whites, honey, vanilla extract, and cinnamon in a blender until creamy.
  3. Ladle batter into preheated waffle iron according to manufacturer directions and cook the waffles until golden and crisp, about 5 minutes. Repeat until entire batch of batter is used.

Took the basic recipe and based on the many positive reviews, added 1 tsp each of baking powder, vanilla and cinnamon; I did forget to add a pinch of salt but will next time. Easy to make, easy to eat. Heartier than a standard waffle. Thank you for a great recipe!

I’ve been looking for this recipe my whole life! I suffer major energy crash after eating waffles or pancakes, even after switching to gluten free recipes. These were perfect! I felt great after eating… not sleepy. The batter is very thin with the following changes: add 1 tbsp butter/coconut oil, 4 whole eggs instead of 2 plus whites. Like other reviewers, I blended oatmeal into flour, set aside, added back into blended wet ingredients to prevent gumming up on the bottom of the blender. Though the batter looked very thin, they cooked up and browned beautifully in my waffle iron set to 2 even without baking powder. Not rubbery, and not mealy. Perfect amount of cinnamon and I added a touch of salt. Thanks for a great recipe!!! I can’t wait to make this for guests.

I love these waffles for the protein-carb ratio. My daughter loves them because they are gluten free and delicious. So very easy to make, and they taste great. I have made them as is, and they are fine, although a little heavy and moist. I started adding 1/4 teaspoon baking soda and 1/4 teaspoon cream of tartar, and they fluff up with a slightly crispy crust–just the way I like them.

Easy and the kids love them. Made 1/2 batch (for 2 waffles) Used 2 whole eggs as per other reviewers’ suggestions and added 1/2 tsp baking soda. Perfect.

I NEVER post reviews, but had to for this. I was craving waffles but wanted extra protein and less carbs. I did what others said and added the 1/2 tsp of baking powder. I blended the oats first and added the baking powder. Then I blended the other ingredients before adding in the oats and baking powder. The waffles came out perfect! Fluffy and light and absolutely delicious! This will be a staple in my kitchen from now on!!!!

5 stars with the modifications of 1/2 teaspoon baking powder, using 4 whole eggs and blending oats first. I was pleasantly surprised by the texture and taste! My husband was looking for a high protein breakfast and this is the perfect recipe for that!

Tried this recipe stunk up my entire house, did not cook well, and was completely flavorless even though I added in extra vanilla, honey, and cinnamon. Plus I put in some blueberries. Will not be making these again.

My five-year-old begs for waffles every morning. I wanted to find a healthier alternative to traditional waffles that I could easily whip up on a weekday. This recipe fits the bill with the following changes: I used four whole eggs instead of whites, simply for convenience. I also added a teaspoon of baking powder, per another reviewer’s suggestion. Since I didn’t want them to stick, I also added a tablespoon of canola oil to the batter. Lastly, since I didn’t realize I was running low on oatmeal until I made the recipe, I used a half cup of oatmeal and a half cup of almond meal. I sprayed both sides of my waffle iron lightly with cooking spray every couple of waffles. They have a different texture than traditional waffles, but I didn’t find them rubbery. The flavor was mild and pleasant and they were great with butter and maple syrup.

Fantastic!!! I am so excited about this pancake recipe. Three small kiddos and two picky eaters, this high protein breakfast option tasted fantastic and was enjoyed by the whole family. I’ll keep it short. I followed the other suggestions. I did the 4 eggs. I added 1 tsp baking soda. The one thing I did different that I think would help a ton is I added 2 heaping tbsp of coconut oil. My dad’s a health nut and he’s always been big on healthy fats with your grains to help you digest. Plus no sticking issues.
