Ingredients

  1. 1 cup fresh strawberries, quartered
  2. ½ cup milk
  3. ⅔ cup granola, divided
  4. ¼ cup blueberries
  5. 1 scoop protein powder
  6. 1 teaspoon vanilla extract
  7. ¼ cup chocolate chips

Instructions

  1. Combine strawberries, milk, 1/3 cup granola, blueberries, protein powder, and vanilla in a blender; blend until smooth.
  2. Layer 1/2 of the chocolate chips on the bottom of a bowl. Pour smoothie over top, then sprinkle with remaining chocolate chips and remaining granola.

This was a great and filling lunch! I didn’t have granola on me so I doubled the chocolate chips :-).

This smoothie was surprisingly delicious. Since fresh berries are not in season now I used frozen berries I had on hand. In addition I used vanilla bean paste and added extra powders. Our family drank it as a smoothie vs putting it into a bowl. I’ll definitely try it as a bowl the next time I make it since is a really versatile recipe and great for breakfast or lunch.

Very easy recipe since I had everything on hand already! The chocolate chips and vanilla extract definitely made this into more of a treat breakfast/lunch but the protein powder and fruit make it filling and nutritious. I used peanut butter Kind granola with added a nice flavor and used oat milk which paired and blended great. Although after everything was blended and ready to eat the smoothie bowl was basically room temperature. I prefer cold and even icy smoothies, so next time I would use frozen berries. One easy fix that would bring this to 5 stars for me!
