These light and fluffy banana cookies should be known as “Houdini cookies” because they sell out so rapidly. My one-year-old daughter loves to help me make them; she peels the bananas, removes the paper from the butter, and then mashes and stirs everything together. This recipe was my grandmother’s for banana bread, but I once attempted making cookies because I didn’t have time to wait an hour for the bread to bake. We all concurred that this outcome was superior.

I thought this was delicious. It was the perfect amount of sweet and I felt full after eating it. A great way to get protein!
I like all of the ingredients in this recipe but for some reason I did not like this. I tried adding Swerve to sweeten it up a bit, but I still did not care for it. I could not eat it and I wound up throwing it away. What a shame.
