Overnight Slow Cooker Apple Oatmeal

Given that we are from south Louisiana, it goes without saying that my mother-in-law is one of the best cooks I know and gave me this recipe. These are both visually appealing and delicious because to the diced up dried cranberries.

Ingredients

  1. butter-flavored cooking spray
  2. 2 medium apples, peeled and diced
  3. 2 cups old-fashioned rolled oats
  4. ⅓ cup brown sugar
  5. 2 teaspoons ground cinnamon
  6. 2 teaspoons vanilla extract
  7. ½ teaspoon pumpkin pie spice, or more to taste
  8. 4 cups water

Instructions

  1. Spray the inside of a 4-quart slow cooker with cooking spray.
  2. Place diced apples into the slow cooker; add oats, brown sugar, cinnamon, vanilla extract, pumpkin pie spice, and water.
  3. Cook on Low for 8 hours; switch cooker to Warm until ready to serve.
  4. You can substitute milk for half of the liquid for creamier oatmeal; you can also substitute steel cut oats for the old fashioned oatmeal.
  5. Leftover oatmeal can be used to make muffins or bread.

Spices didn’t blend very well. The oat were a little over cooked. I do plan to try again with some adjustments.

Well, I can’ t imagine what I did wrong , but I woke up eagerly expecting a bowl of yumminess and instead found a soupy mess. I followed the recipe exactly, but It is a nearly inedible goo. And the crock pot has stuff cooked onto it that is going to be a job to clean up. Yuck. Had high hopes. Big fail.
