I enjoy skewering pickled jalapenos, pickled onions, olives, and small dills to go with the food. Start with 1 ounce of pickle brine, and if you want a stronger pickle flavor, add another ounce. The flavor of pickle brine differs based on the brand.

Ingredients

  1. 8 large eggs
  2. 2 cups milk
  3. 2 teaspoons vanilla extract
  4. 12 slices French bread
  5. ½ teaspoon ground cinnamon
  6. 1 ⅓ cups brown sugar
  7. ¾ cup unsalted butter, softened
  8. 3 tablespoons corn syrup
  9. 1 cup walnuts, chopped

Instructions

  1. Mix eggs, milk, vanilla, and cinnamon together.
  2. Place bread slices in a greased 9×13-inch pan. Pour egg mixture over top. Cover and refrigerate, 8 hours to overnight.
  3. Remove from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
  4. Cream together brown sugar, butter, and corn syrup; it will be very thick. Spread over the bread, then sprinkle with walnuts.
  5. Bake in the preheated oven until golden brown, about 1 hour.
  6. Walnuts are optional.

Nice French Toast Bake. I thought there was a little too much butter, but I liked the walnuts on top.
