Ingredients
- 3 over-ripe bananas, mashed
- 2 eggs
- 3 tablespoons canola oil
- 1 teaspoon ground cinnamon
- 2 cups whole wheat pastry flour
- 1 cup chopped walnuts
- ½ cup dark chocolate chunks (Optional)
- ¾ cup white sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon vanilla extract
Instructions
- Combine bananas, eggs, canola oil, and cinnamon in a bread machine; add flour, walnuts, chocolate, sugar, baking powder, baking soda, and vanilla extract.
- Follow manufacturer’s instructions for ‘quick bread’ setting.
- I use organic flour, free-range eggs, organic canola oil, organic bananas, organic walnuts, and organic chocolate.

Reviews
This is more dense than a traditional banana bread but it has a nice flavour and it’s also moist. I don’t own a bread machine so I mixed everything in a bowl and baked it for 55 minutes @350. Since organic bananas tend to be smaller I used 1 cup of mashed bananas along with organic flour, eggs and cinnamon. I didn’t include the walnuts because of a nut allergy in the family and used chips instead of chunks. Thanks for the recipe.
