Ingredients
- 6 cups old-fashioned oats
- 1 cup slivered almonds
- 1 cup flaked coconut
- ½ cup hulled green pumpkin seeds
- ½ cup shelled sunflower seeds
- ½ cup crushed pecans
- 1 teaspoon salt
- ½ cup butter
- ⅔ cup honey
- 1 teaspoon vanilla extract
- 1 cup dried cranberries
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Stir oats, almonds, coconut, pumpkin seeds, sunflower seeds, pecans, and salt, together in a large bowl.
- Stir butter and honey together in a small saucepan over low heat until the butter is fully melted.
- Stir vanilla extract into the melted butter.
- Pour butter mixture over oats mixture; stir until evenly coated.
- Spread the mixture onto 2 large baking sheets into single, even layers.
- Bake in preheated oven 10 minutes. Remove from oven and gently turn the granola. Continue baking until golden brown, about 10 minutes more.
- Set granola aside to cool to room temperature; transfer to a large bowl.
- Gently fold cranberries into the granola.

I’ve made it several times! I don’t add the cranberries because I sprinkle the granola over fresh fruit and yogurt
Very good! I used maple syrup instead of honey, coconut oil instead of butter, raisins instead of cranberries, and added 1 1/2 tsp of cinnamon.
Makes a ton and is really easy. My kids enjoyed it too. I added some Chex cereal, marshmallows and white chocolate chips. I think it was almost too sweet when I did that as it has a good taste all by itself!
Was easy, and Tasty. I split the amounts in half. I did add some All-Bran cereal, chopped dates and coconut flakes. I’m pretty sure I could have added whatever fruit or cereal appealed to me and it would’ve been good. I liked that it wasn’t overly sweet. Definitely will make again. Maybe put in dry apples and cinnamon next. It’s a very good base. Great topping for yogurt.

Try substituting coconut oil for the butter, it also works well and is a healthier option.
