Soup may be decadent, but how? The closest thing is probably this homemade lobster bisque. A comforting, satisfying richness that is ideal for a chilly winter day is provided by the soup’s creamy, gently sweet broth and chunks of buttery lobster meat. Sprinkle chives on top.

Ingredients

  1. ½ cup quick-cooking oats
  2. 1 tablespoon chopped walnuts
  3. 2 teaspoons brown sugar
  4. 1 teaspoon ground flax
  5. 1 teaspoon chia seeds
  6. ½ teaspoon sesame seeds
  7. ¼ teaspoon ground cinnamon
  8. 1 pinch ground nutmeg
  9. 1 pinch salt
  10. 1 cup boiling water
  11. ¼ cup frozen blueberries, thawed

Instructions

  1. Mix oats, walnuts, brown sugar, flax, chia seeds, sesame seeds, cinnamon, nutmeg, and salt together in a bowl. Pour boiling water over the oats mixture and stir so ingredients are completely moistened; steep until the oats are softened, about 2 minutes. Stir blueberries through the oats mixture.

I wasn’t sure if I would like this (not a huge fan of chia and sesame seeds), but I really did. The oatmeal wasn’t too sweet and had a nice nutty, crunchy taste and texture. It was slightly thick, but not too thick to eat or stir. You could easily add more water or top with whatever milk product you like for a thinner oatmeal. It made a huge serving, so I refrigerated the leftover to eat later this afternoon. Thanks for a healthy breakfast I’ll be making again.

I followed the recipe to the letter, and what I didn’t like is that without additional liquid/moisture, you could eat this with a knife and fork. The oats, flax, and chia seeds all absorb the water, so the easy fix is to add more boiling water at the outset. I added vanilla almond milk (and a LOT of it) to the bowl, and still didn’t get the consistency that I like. But I enjoyed the crunch from the nuts, the pop of fresh flavor from the blueberries, and the amount of fiber which will keep me from snacking this afternoon. I’m giving this 4 stars because it tastes good and what I see as an issue can be easily resolved, at least for me.
