Mini Very Berry Pancake Skewers

For Valentine’s Day, holiday cookie exchanges, host or hostess presents, or any other occasion where you want to indulge in a little something sweet, try these indulgent no-bake goodies.

Ingredients

  1. 2 tablespoons rice vinegar
  2. 1 cup milk
  3. 1 ½ cups all-purpose flour
  4. ½ cup unsalted butter, melted
  5. 2 large eggs
  6. 1 tablespoon white sugar
  7. 1 teaspoon baking soda
  8. 1 teaspoon baking powder
  9. 1 teaspoon salt
  10. 1 teaspoon vegetable oil, or as needed
  11. bamboo skewers
  12. ¼ cup fresh raspberries, or as needed
  13. ¼ cup fresh blueberries, or as needed
  14. ¼ cup fresh strawberries, or as needed
  15. 1 tablespoon maple syrup
  16. 1 tablespoon powdered sugar, or as needed (Optional)

Instructions

  1. Stir rice vinegar into milk. Set aside to “sour”, about 5 minutes.
  2. Combine milk mixture, flour, butter, eggs, sugar, baking soda, baking powder, and salt in a large mixing bowl. Whisk until lumps are gone.
  3. Heat a nonstick pan over medium heat. Add oil. Pour 1/2 tablespoon of batter for each pancake. Cook until bottom side is golden brown, 1 to 2 minutes. Flip and cook until other side is golden brown, 1 to 2 minutes more. Transfer to a plate. Repeat with remaining batter.
  4. Place 3 to 5 mini pancakes on each skewer. Top with raspberries, blueberries, and strawberries, drizzle with some syrup, and sprinkle with some powdered sugar.
  5. You can substitute baking powder in place of baking soda because baking powder contains sodium bicarbonate, which is baking soda. If using only baking powder, use 1 1/2 teaspoons.
  6. You can substitute any type of white vinegar for rice vinegar. You can substitute honey or any type of syrup for maple. You can use any berries you like–fresh or frozen that have been thawed.
  7. When pouring the batter onto the pan, if the batter doesn’t stay in a round shape and starts to flow around, that means if you have too much liquid in the batter. Adding some more flour into the batter will solve this issue.
  8. To make regular pancakes, just pour 3 to 5 tablespoons of batter for 1 pancake.
