Mexican-Inspired Breakfast Casserole

These fried potato wedges are a delicious side dish. They have a crunchy exterior and fluffy interior and are peppery. They match anything.

Ingredients

  1. cooking spray
  2. 1 (16 ounce) package bacon
  3. 10 large eggs
  4. 1 cup milk
  5. ½ medium red bell pepper, chopped
  6. ½ medium yellow bell pepper, chopped
  7. ½ medium onion, chopped
  8. ¼ cup chopped fresh cilantro, or to taste
  9. salt and ground black pepper to taste
  10. ½ cup croutons, or more to taste
  11. ½ cup shredded pepper Jack cheese, or more to taste
  12. ½ cup shredded Cheddar cheese, or more to taste
  13. ½ cup shredded Swiss cheese, or more to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a square baking pan with cooking spray.
  2. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop when cool enough to handle.
  3. Whisk eggs and milk together in a bowl. Mix in bell peppers, onion, cilantro, salt, and pepper.
  4. Arrange croutons in the bottom of the prepared pan. Layer with chopped bacon, then pepper Jack, Cheddar, and Swiss cheeses. Pour the egg mixture over the top.
  5. Bake in the preheated oven until set, 30 to 40 minutes. Remove from the oven and let sit for 20 minutes before serving.
  6. Sausage or Canadian bacon can be used in place of bacon.
  7. 1 pint half-and-half can be used instead of milk.

Good easy breakfast casserole. Crouton base was good. I think spinach would be good substiute for cilantro. If you like spicier , maybe add some jalapenos.

I loved this casserole! It was fairly easy to throw together, and tasted fantastic! I used some of our homemade thick-cut bacon, so I only used 6 slices, and felt that was plenty. I also used homemade croutons, and left off the Swiss cheese, as my hubby doesn’t care for it. I layered the croutons and cooked bacon in the pan, added the egg and veggie mixture, then sprinkled the cheese on top of that–and I would layer it that way again since it worked beautifully. Also, there’s no pan size listed, so I guessed, and went with a glass 9×13″. Worked perfectly! (it took 33 minutes for the casserole to bake). I could see where adding some extra heat (maybe in the form of diced jalapenos) would be fantastic as well. Thank you for the recipe!
