simple breakfast sandwiches with baked eggs. An additional inexpensive meal that can be prepared in advance, frozen, and then microwaved for quick breakfasts on the go. Use other cheeses if you want more flavor. Colby-Jack Slices were used. This recipe was a hit with my guys!

Ingredients

  1. 12 eggs, beaten
  2. ¼ cup softened butter
  3. 6 croissants, split
  4. 12 slices smoked ham
  5. 6 slices Colby-Jack cheese

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C). Spray a 9×13-inch baking dish with cooking spray.
  2. Pour beaten eggs into the prepared baking dish. Bake in the preheated oven until they set and are no longer runny, 8 to 10 minutes. Remove, allow to cool, and cut into 6 portions.
  3. Butter the cut sides of croissants and place one portion of the cooked egg onto each croissant bottom. Top each sandwich with two slices of ham and a slice of Colby-Jack cheese. Place croissant tops on top of sandwiches; wrap each sandwich well with plastic wrap. Place sandwiches onto a baking sheet; freeze until solid, about 3 hours. Store frozen.
  4. To reheat, cook a wrapped sandwich in a microwave on High until hot in the center, 1 to 2 minutes.
  5. Variation: brown a pound of sausage (your favorite) and add to egg mixture prior to baking the eggs, then omit the ham.

I think these are good. Taking advice from others, I added milk, cooked and drained onion, sausage and mushrooms to my eggs. I added cheese on top before baking in the same size pan as recommended. I did use English Muffins instead of croissants and placed a slice of chees on the bottom. I used a glass to cut out perfect size portions and ate the rest for breakfasts over the weekend. I wrapped them in saran wrap, froze them on a baking sheet, and bagged the in a freezer bag once frozen. I take one out for work the night before and remove the wrap before microwaving them for 30 seconds in a paper towel. Delicious!

The timing on this recipe is way off. My eggs took twice as long to get set. But the end result wasn’t bad. I may use a variation on this for other egg dishes.

Giving one star as the egg timing is severely off. I did 8 eggs and it took nearly a half hour at 350° and ended up having to crank temp to 400° for additional 10 mins just to cook thru. And yes my oven is temp’d weekly to ensure accuracy.

Cut the recipe in half for our 3-person family; baked in pie dish for the smaller portion. Eggs took longer to cook, but result was very tasty. Used pre-cooked turkey sausage. Easy weekend treat with leftovers for the week!

Absolutely no changes to the original recipe. I did, after freezing them and preparing to heat the frozen sandwiches, I had some jalapeño peppers standing by so when it was time to consume, I simply added the pepper slices and VERY happily proceeded to eat my sandwich! GREAT!

I made it and it took more like 15-20 min at 350 degrees. (granted eggs were not at room temperature, but recipe didn’t say to bring to room temp). Pretty boring, and odd texture if you’re used to traditional eggs on the stove top.

I have made these with croissants a couple of times. I am having problems with cooking the eggs and reheating after they have been frozen but it is still an awesome recipe. These are perfect for a quick morning grab when life gets busy. I cant wait to try these with english muffins

These are so good! And I love having these ready to go for a quick snack for my son and of course breakfast on the go. I haven’t figured out yet how to reheat them properly though. For me I’ve found that I need to defrost the egg part first and then add it back to the sandwich then heat it all together for about 45 seconds or so. Thank you for the recipe!

I love the idea of these, but the reheating process doesn’t go well. They’re thick sandwiches is you use slices of ham that are pre-made for breakfast sandwiches, so the cheese is blisteringly melted while the middle is still cold. And I found the whole thing too greasy (we ended up using forks to eat them). They do smell heavenly though!

I am always interested in trying a recipe I can make and then freeze to eat at my convenience. Usually a recipe with 12 eggs would be past over because I am only cooking for me. This recipe is great. Not only is it a convenience to have breakfast in a matter of minutes, but is so good!

Really, for me it was a total flop. I don’t know what I did wrong but it was a limp watery croissant with cardboard filling when I reheated it after freezing and I heated it far less time than the recommended 1-2 minutes. Oh well – I had high hopes and it looked really good up until I took it out of the freezer and microwaved it.
