Love Letter – Crepes

In our hostel, we once served crepes under the name “love letter.” Everyone adored it. My family like this dish that I cook for them as well.

Ingredients

  1. 1 ½ cups all-purpose flour
  2. 1 tablespoon white sugar
  3. ½ teaspoon baking powder
  4. ½ teaspoon salt
  5. 2 cups milk
  6. 2 tablespoons butter, melted
  7. 2 eggs
  8. ½ teaspoon vanilla extract
  9. 2 teaspoons vegetable oil, or as needed
  10. ½ cup flaked coconut
  11. 1 tablespoon white sugar, or more to taste
  12. ¼ teaspoon ground cardamom

Instructions

  1. Sift flour, 1 tablespoon sugar, baking powder, and salt together in a large bowl. Whisk milk, butter, eggs, and vanilla extract into flour mixture until smooth.
  2. Heat vegetable oil in a skillet over medium-high heat. Scoop about 1/4 cup batter and pour onto hot skillet. Tilt the pan in a circular motion to evenly distribute the batter. Cook crepe until bottom is lightly browned, about 2 minutes. Loosen with a spatula, flip, and cook the other side, about 2 more minutes. Transfer to a plate. Add more oil to the pan and repeat with remaining batter.
  3. Mix coconut, 1 tablespoon white sugar, and cardamom together in a small bowl. Spread 1 to 2 tablespoons of coconut mixture into the center of each crepe; fold crepe over the filling like an envelope or in half.

I will definitely make it again, but i couldn’t decide the pan size to use. It was very delicious i would recommend this recipe. I only gave this four stars because the filling was not great. I would put about a half cup more milk. For the filing i would recommend putting an eight ounce block of cream cheese and some chopped strawberries beat in with the cardamom and sugar.

3.30.16 The crepes are pretty good, but I found the filling and flavor of the cardamom almost nonexistent. I definitely would add more to the filling, if nothing more than some small pieces of berries, blueberries, bananas, a little cream cheese, whatever. There must be some “technique” involved in folding the crepe into a “letter” because that was a little tedious for me. In the future, I’d probably just fold or roll like an ordinary crepe. ravera, thanks for sharing a recipe that you used to have in your hostel.
