This is my take on a traditional Latvian dish. It was a typical Latvian breakfast or lunch dish. It had a little butter and honey on top. Instead, my kids prefer to drizzle on maple syrup. As a result of how simple it is to reheat for a fast snack, I usually always double the recipe.

Ingredients
- 1 cup cottage cheese
- ½ cup raisins
- 2 eggs
- 2 tablespoons white sugar
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 tablespoons canola oil
- 1 ½ cups all-purpose flour
Instructions
- Mix together cottage cheese, raisins, eggs, sugar, vanilla extract, cinnamon, and salt in a large bowl until well combined. Add flour slowly, mixing until incorporated and batter is very thick.
- Heat oil in a large skillet over medium heat. Drop batter by tablespoonfuls onto the hot skillet and cook for 1 minute. Flip and flatten slightly with a spatula, cook until browned on the other side, about 2 minutes more. Flip back to the first side and cook until browned, about 1 more minute. Repeat with remaining batter.

Reviews
These were scrumptious. I didn’t have raisins so I used chopped dates and I added some crushed toasted coconut flakes. I was out of vanilla too. Used chia for half of the eggs (made a double batch with 2 eggs plus chia seeds). Delicious!
