With just a few ingredients, you may quickly and easily prepare the traditional spaghetti all’Amatriciana noodle meal. Pancetta is preferred over guanciale, which is customary.

Ingredients

  1. ½ cup butter
  2. 2 cups milk
  3. 1 cup all-purpose flour
  4. 2 eggs
  5. 2 tablespoons white sugar
  6. ½ teaspoon salt

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Place butter in a 9×13-inch baking dish and place in the preheating oven until melted, about 5 minutes.
  2. Beat milk, flour, eggs, sugar, and salt together in a bowl until batter is smooth. Pour melted butter from baking dish into batter and beat until smooth. Pour batter into the baking dish.
  3. Bake in the preheated oven until cooked through, 20 to 25 minutes.

This is very similar to a Dutch Baby which my son loves! I reduced the butter to 1/4 cup and the salt to 1/4 tsp, I added a tsp of vanilla and 1/4 tsp nutmeg. Mine started to brown a bit too much at 23 minutes, so keep a watch on it! I served with jam and a sprinkling of icing sugar, my son and I ate the whole thing, thanks for a tasty recipe.
