Delicious keto pancakes that are simple and quick. Serve with syrup and top with nuts, whipped cream, or blueberry jam of your choice. Avoid sweets if you are rigorously following the Keto diet.

Ingredients

  1. 2 ounces cream cheese, softened
  2. 2 eggs
  3. 1 teaspoon white sugar
  4. ½ teaspoon ground cinnamon
  5. cooking spray

Instructions

  1. Combine cream cheese, eggs, sugar, and cinnamon in a blender; blend until smooth. Let rest 2 minutes or lightly tap on counter to remove bubbles.
  2. Heat a skillet over medium heat and grease with cooking spray. Pour 1/4 of the batter into the skillet; cook until bubbles start to form, about 2 minutes. Flip and cook until cooked through, about 1 minute. Transfer to a clean plate. Repeat with remaining batter.

This recipe is super easy and really like it. I use Swerve instead of sugar and coat the hot pancakes with butter and a little more Swerve as syrup.

Ok. They are more like crepes than pancakes. The heat needs to be a bit hotter than “medium” for the crepe to cook properly in order to turn. (It needs to caramelize just right before flipping.) I used a non-stick pan for this…and, I’m not too sure I would try my cast iron skillet. With whipped cream on top they were delicious…the ones that turned out after I experimented with turning them at “just the right time.”

Love these! I topped my with sugar free maple syrup, whipped cream, fresh strawberries and sprinkle of cinnamon. Nice change from my regular keto breakfast of eggs and bacon. My teen eats hers with Nutella and rolled up as these are very crepe like. Really delicious!

I really liked these–they are so much better than the banana/egg pancakes. If you’re looking for a low-carb pancake, I think this is a much better choice. I didn’t use a blender; I just used a whisk and a bowl. They spread and don’t have a perfectly round shape, but that’s not a problem for me. I thought they were great with a drizzle of honey and a little whipped cream.
