Ingredients

  1. 1 (10.75 ounce) can Campbell’s® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
  2. 1 (8 ounce) container sour cream
  3. ½ cup butter or margarine, melted
  4. 1 (32 ounce) package frozen hash-brown potatoes
  5. 1 medium onion, chopped
  6. 1 (8 ounce) package shredded Cheddar cheese
  7. 1 pinch Ground black pepper
  8. ½ cup crushed corn flakes

Instructions

  1. Mix soup, sour cream, butter, potatoes, onion, cheese and black pepper to taste in 3-quart shallow baking dish. Sprinkle corn flakes over potato mixture.
  2. Bake at 350 degrees F for 45 minutes or until hot.

We love this version of potato casserole. We have a few members of our family that do not eat meat, so the other recipes that call for cream of chicken soup don’t work for us. I follow this recipe to a T and it is always delicious. Sometimes we top with crushed crackers or just top with a little cheese and bread crumbs if we don’t have corn flakes in our house. We love it really hot, so we bake for more time, but that is just personal to each cook and how their oven works. Great recipe!

I’ve been making this for years. The one thing that makes it taste a lot better in my opinion is to cook the onions in butter first. I microwave them.

I had this at Cracker Barrel and had to try and make it for myself. This makes a lot and is hard to for a single person to use up. I’ll make it again, but will try to cut things in half. You can’t go wrong on taste here.

Doesn’t need the cornflakes and if you use O’Brien hash browns you can omit adding the onion.

This recipe is easy and is fine just the way it is. I like that the ingredient amounts are easily grasped. Substituted a third of a cup of chopped green onions, once, instead of one med. onion. It was delicious, but I like green onions and my picky onion haters liked it also.

my mother in-law has been making this for years for our Christmas morning breakfast at my house. I started making it using this recipe. it is so good. I use cream of chicken as my mom is allergic to mushroom and use a bigger pan and more cornflakes add a sprinkle of garlic and onion powder. not big changes. making it right now for my mom and I for mothers day. thanks for sharing.

This was delicious!! But you have to mix it in another bowl first, it doesn’t mix well in the 3 qt casserole dash as directed. Also, when I make this next time, I’ll Thaw the potatoes first. Frozen potatoes and melted butter don’t work well together. But I will definitely make it again.

The ingredients were really hard to mix in the baking dish because they basically filled it to the brim, so stirring it caused the frozen ingredients to crumble and pop out of the container, making a mess. It would be easier if the recipe allowed one to mix them in a larger, separate container before transferring them to the baking dish. The dish came out of the oven quite mushy to me; I would have preferred it be crispier and better done. It was very forward on the onion flavor, and very bland otherwise, so I had to add a lot more black pepper than the recipe calls for, as well as douse it in barbecue and hot sauce in order to eat it.

Wonderful basic recipe! I added a can of cooked white chicken and increased the sour cream by 1/2 cup. I increased the butter to a full cup and added an extra handful of cheese. My family has raved about it.

Turned out great in the slow cooker. I omitted the sour cream , mixed cheddar and mozzarella cheese, and used bread crumbs instead of corn flakes. Everything worked well together and tasted great for brunch
