Jamaican Cornmeal Porridge

It’s a family recipe for this cornmeal porridge. The recipe yields enough porridge for two hungry six-year-old children or one hungry adult.

Ingredients

  1. 1 cup water
  2. ⅓ cup cornmeal
  3. ¼ cup whole milk
  4. ¼ cup coconut milk
  5. 3 tablespoons white sugar
  6. ½ teaspoon vanilla extract
  7. ½ teaspoon salt
  8. ¼ teaspoon ground nutmeg
  9. ¼ teaspoon ground cinnamon
  10. 2 tablespoons raisins (Optional)

Instructions

  1. Combine water, cornmeal, whole milk, coconut milk, white sugar, vanilla extract, salt, nutmeg, and cinnamon in a blender; blend until smooth.
  2. Bring mixture to a boil in a saucepan; whisk occasionally until beginning to thicken, about 5 minutes. Reduce heat when slow bubbles form. Stir frequently until as thick as you like, about 5 minutes. Add raisins.
  3. Remove from heat, cover, and let cool before serving, about 5 minutes.
  4. You may also blend cornmeal mixture in a NutriBullet or shake well in a sealed container.

I like the flavor and can’t wait to add raisins at some point. I will be skipping the blender part because my blender will not blend this stuff to a smooth mixture. Not mad about it though.
