Ingredients
- 2 cups rolled oats (such as Bob’s Red Mill®)
- ¼ cup brown sugar
- 2 tablespoons vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 5 cups water
- 2 tablespoons milk, or to taste
Instructions
- Combine oatmeal, brown sugar, vanilla, cinnamon, and salt in a multi-functional pressure cooker (such as Instant Pot). Pour in water and mix to combine. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer’s instructions, for 8 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid.
- Let sit until desired consistency is reached, about 5 minutes. Stir and serve with a splash of milk.
- The key to making perfectly creamy (not mushy or crunchy) oatmeal is to use extra-thick-cut rolled oats. They’re not typically sold at grocery stores, but you can usually find them at health food stores or online. The brand I use is Bob’s Red Mill.

I have to wonder if the amount of vanilla is a typo and should be teaspoons instead of tablespoons?? I scaled this recipe to 2 servings and knew that 1 tablespoon would be too much for us. Reduced the vanilla to 1 teaspoon which gave a hint of vanilla but did not dominate the flavor. This is one of those recipes that just doesn’t make sense to me to use an Instant Pot®. By the time it takes for the pressure to come up, then cook, then do a natural release after 8 minutes, and then stirring and letting it sit for a few minutes more to get the consistency you want is just too much time. You can cook it stove top in a fraction of the time, and even the cleanup is easier. The consistency was good, taste was good, but I won’t be using the Instant Pot® again for a bowl of oatmeal.
Good recipe! I left out the cinnamon, salt, and vanilla. Oatmeal was cooked perfectly. Quick release made a mess spurting liquid. Next time I will use 4 cups water. After serving, I added sliced banana. It was too much for one person so I will half the recipe.
Absolutely perfect. I saw another reviewer who wasn’t a fan of vanilla, but I liked it. I am going to make it again right now and I am going to add some fresh peaches to it. Stores and reheats really well. Will probably reduce amount of vanilla with the peaches.
Got a burn warning on the instant pot. Oatmeal that wasn’t burned was edible but I’m not a fan of the vanilla (I used real vanilla extract). Won’t make again.
