Individual Baked Eggs

A simple concept that can be implemented by any number of individuals with little effort. Individual baked eggs with a square of cheese on top and a piece of bacon around them. The simple act of baking these eggs as opposed to cooking them in the more usual way gives them a very pleasant flavor. It’s great that there are no splatters and that you may prepare 12 or more eggs at once.

Ingredients

  1. 1 slice bacon
  2. 1 teaspoon melted butter
  3. 1 egg
  4. ¼ slice Cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, but still flexible. Wrap bacon slice around the inside of a muffin cup. Place a teaspoon of butter (or bacon grease) in the bottom of muffin cup. Drop in egg.
  3. Bake in preheated oven for 10 to 15 minutes. Place 1/4 slice of cheese over egg, and continue cooking until cheese is melted and egg is cooked.
  4. This recipe is for 1 serving. Scale it to the number of eggs you would like to bake.
  5. You can cook 12 eggs in a muffin pan. If you are doing less, try to space them out in the pan for more even cooking.
  6. Cooking times vary in different ovens and at different altitudes; adjust accordingly.

Very clever recipe. I made it for dinner tonight and made NO changes on my first time through, as I try to always do. It came out really good. Next time I will cook the bacon a bit closer to crispy before forming the hoop to make it a bit easier to cut and eat. I used all 10 + 5 minutes of cook time. I may add just a touch of spice, next time too.

I did try it in the air fryer for 8 minutes. I was good, but next time I’d only go 6 minutes because the yolk was a little too done for my liking

This recipe is super simple and is really a game-changer when trying to feed a crowd or have a fancy brunch with a number of items. I cooked my bacon on a tray in the oven the day before so that I could make a large number of these for a special event. I would absolutely recommend this recipe as it is so easy to add ingredients if you choose to make it your own.

I’ve been doing this for some time, but I scramble a dozen eggs at a time, then mix in the bacon. I usually add whatever veggies I have on hand as well. They store well in the fridge for a few days so I take them to work with me instead of having to stumble around at 5am trying to make a reasonable breakfast.

I make these almost once a week. i use a finely diced ham by Hormel. Also, some family members won’t eat egg whites so I scramble the eggs up with a tablespoon of milk per egg. doing this you can get more than 1 egg per cup. Top it off with shredded white cheddar, A bit of salt and pepper and bake for 23 minutes. I use a small silicone spatula to remove them from the muffing tin, so i don’t scratch it. I use White cheddar because my son can’t have Annato, which is used to color the cheese the orangy color. They go faster than hot cakes!

I have been making variations on this for years. They are so easy and delicious. You can also whip your eggs and make cupcake omelets this way. I like them that way with some chopped mushrooms, onions and tomato.

I used my Nuwave infrared oven to bake in little custard cups with Canadian bacon. Cut the Canadian bacon in strips and lined sides of cups. Baked at 350 for 10 min, added cheese and baked for 5 min more. Also placed buttered English muffins in the Nuwave for the last 4 minutes of baking. Muffins were toasted perfectly, and ready at same time.

Very easy and a big hit with my family. They prefer that I don’t over cook the pan, so that they egg yolk stays a bit soft. I like to make a bunch and then warm them up during the week for breakfast. A good high protein breakfast.

Due to expired bacon, I had to use lean tavern ham slices in its place. I also, for color and texture, added some green onion with the egg. I baked for 10 minutes, added a slice of pepper jack cheese on top of each egg and baked for 6 minutes more. Husband really enjoyed this, I, for one, think I want to make it with bacon (as stated in recipe) for some added fat. Will definitely make again.

We liked this recipe. Each egg was tender and the bacon just right. I used Applewood smoked bacon and smokey cheddar to make it extra special. The bacon and cheese were salty enough. You don’t need to add extra salt.
