Honey Whole Wheat Pancakes

I’m always thinking of new ways to use the herbs from my little garden into my meals. I was ecstatic to learn that mint and lavender blend beautifully together in this mixture. Enjoy your meal!

Ingredients

  1. 1 ¼ cups whole wheat flour
  2. 2 teaspoons bran
  3. 2 teaspoons baking powder
  4. ½ teaspoon salt
  5. 1 cup milk, or more as needed
  6. 1 large egg
  7. 1 tablespoon honey
  8. cooking spray

Instructions

  1. Mix flour, bran, baking powder, and salt together in a bowl.
  2. Whisk milk, egg, and honey together in different bowl. Slowly blend wet ingredients into dry ingredients until lightly mixed; do not overmix or it will make the pancakes less fluffy. Let sit for 5 minutes so wheat and bran can really absorb the wet ingredients.
  3. Meanwhile, preheat a griddle or skillet to medium heat and coat lightly with cooking spray.
  4. Ladle approximately 2 tablespoons batter onto the hot skillet for each pancake, working in batches if necessary. Cook until pancakes are slightly bubbly, about 1 minute. Flip and cook until golden brown on the other side, 2 to 3 minutes.
  5. You can leave out the bran if you like.

These are simple yet fantastic. I am a big fan of honey, so the only change was I double the honey. These are great with maple syrup or as I like to have them topped with applesauce and a sprinkle of cinnamon. Thanks.

Delicious pancakes–and super fast to make! They’ve got a really nice honey and wheat flavor, and a very nice texture. They’re slightly denser than regular pancakes, but I actually like that. The only substitution I made was to use ground flax meal in place of the wheat bran. I also got 10 pancakes out of this, using a 1/4 cup measure to pour the batter onto the griddle. I would definitely make these again–and may even add a bit of cinnamon just for a touch of spice. Great recipe, thank you!
