Ingredients

  1. 2 cups old-fashioned oats
  2. 1 cup chopped walnuts
  3. ¾ cup brown sugar
  4. ¾ cup dried fruit
  5. ½ cup all-purpose flour
  6. ½ cup whole wheat flour
  7. ½ cup toasted wheat germ (Optional)
  8. ¾ teaspoon ground cinnamon
  9. ¾ teaspoon salt
  10. ½ cup vegetable oil
  11. ½ cup honey
  12. 1 egg
  13. 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a 9×13-inch baking dish or jelly roll pan with parchment paper.
  2. Mix oats, walnuts, brown sugar, dried fruit, all-purpose flour, whole wheat flour, wheat germ, cinnamon, and salt together in a bowl.
  3. Whisk oil, honey, egg, and vanilla extract together in a separate bowl; stir into oats mixture until batter is just mixed. Spread batter into the prepared baking dish.
  4. Bake in the preheated oven until golden brown around the edges, 20 to 25 minutes. Cool slightly on a wire rack; cut into 12 bars while still warm using a pizza cutter.
  5. Any variety of dried fruit and nuts can be used. Substitute quinoa or another grain for the wheat germ if desired.

They are so yummy! I recommend not to put in any fruit in it, it is already sweet as is. I melted some chocolate chips and drizzled it on top of the breakfast bars, and put sliced strawberries on top. So hard to resist!!! These are delicious.
