I first prepared this dish this year after receiving it at my bridal shower. I was astounded at how flawless they turned out; they looked like bakery-quality goods. Even after I made them, I only realized they were vegan. Currently, if only my decorations looked as polished…

Ingredients

  1. 3 tablespoons olive oil
  2. 5 medium red potatoes, peeled and sliced
  3. 4 slices cooked bacon, crumbled
  4. 1 teaspoon salt
  5. ¾ teaspoon ground paprika
  6. ¼ teaspoon ground black pepper

Instructions

  1. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add potatoes. Add bacon crumbles, remaining olive oil, salt, paprika, and pepper. Cook, stirring occasionally, until potatoes are tender and browned, about 20 minutes. Serve hot.

These have been a special breakfast of mine for years. I add cooked bacon chips and onions to the scrubbed skin on sliced potatoes….and of course serve with ketchup.
