Ingredients
- 1 cup water
- 1 cup apple cider
- 1 cup rolled oats
- 1 Granny Smith apple, diced
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ¼ cup hemp milk
- ¼ cup hemp seeds
Instructions
- Bring water and apple cider to a boil in a medium saucepan. Stir in oats, reduce heat to low, and cook, stirring occasionally, for 3 minutes. Add apple, cinnamon, and vanilla extract. Cook, stirring gently, until tender, about 3 minutes more.
- Remove oatmeal from heat; add hemp milk and hemp seeds. Stir and serve.

I love putting hemp seeds in oatmeal. This recipe had a nice taste without added sugar. I added another half teaspoon of cinnamon and used almond milk. My only issue was with the cooking time; the apples were too crunchy for what I like. I brought it all to a boil again and cooked an additional 4 minutes, and the apples were better but still not as tender as I would like. Next time I would cook the apples from the very beginning with the cider and water.
