Healthier Basic Crepes

This recipe is great because it’s so easy to prepare. I changed the ingredients to whole wheat flour and 1% milk to make it healthier. I like to fill them with blueberries that have been warmed in maple syrup and nonfat plain Greek yogurt. Yum!

Ingredients

  1. 1 cup white whole wheat flour
  2. 2 eggs
  3. ½ cup low-fat (1%) milk
  4. ½ cup water
  5. ¼ teaspoon salt
  6. 2 tablespoons butter, melted
  7. ½ cup non-fat plain Greek yogurt
  8. ¼ cup maple syrup
  9. ½ cup blueberries

Instructions

  1. Whisk together flour and eggs in a large mixing bowl. Gradually add milk and water, stirring to combine. Mix in butter and salt and beat until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop 1/4 cup batter onto griddle. Tilt pan with a circular motion so batter coats the surface evenly.
  3. Cook crepe until bottom is light brown, about 2 minutes. Loosen with a spatula, turn and cook other side. Serve hot with yogurt, maple syrup, and blueberries.

Used 2% milk, regular whole wheat flour, no butter, and put the yogurt into the batter. A bit of flour clumps, but overall a solid recipe.

I used butter flavoring instead of butter,I also used whole wheat flour and SF syrup. They didn’t exactly taste sweet I don’t know how sweet they should taste but it was a great recipe and they were definitely crepes! Next time I will add a packet of stevia.

its very easy to make used unsweetened almond vanilla milk on second batch a lot better taste…oh i mixed the wet ingredients first and then slowly added the four…also sift the flour if its been sitting awhile

It’s a good basic recipe to use, I added a tsp good vanilla, 2 tbsp of cane sugar and some dried lemon zest to add flavor since I don’t like syrup. Tastes great with fresh fruit. It really does make 8 crepes exactly. My daughters enjoyed them too.

I forgot the butter altogether, used skim milk, otherwise used the recipe exactly as stated and they turned out beautiful and quick. I got 7 crepes and a mini crepe out of this recipe

After adding an extra 1/2 cup milk, these were truly delightful, healthy crepes! The original recipe makes a batter that’s too dense. (A side thought: “Whole Wheat Crepes” would have been a much better recipe title.)
