Happy Family Oatmeal Bake

A mango lassi is a favorite of everyone, right? But why not try a banana lassi if you don’t have any decent fresh mangos or can’t get mango puree? Because they were so wonderful and they didn’t have any mangos at the time, I bought two at a restaurant in Udaipur. What a find!

Prep Time: 5 mins
Cook Time: 45 mins
Additional Time: 8 hrs
Total Time: 8 hrs 50 mins
Servings: 8
Yield: 8 servings

Ingredients

  1. 3 ½ cups milk
  2. 2 cups old-fashioned oats
  3. 1 cup sweetened coconut
  4. ½ cup packed brown sugar
  5. 2 eggs, beaten
  6. ½ cup golden raisins
  7. ⅓ cup semisweet chocolate chips
  8. 2 teaspoons vanilla extract
  9. ¼ teaspoon salt

Instructions

  1. Combine milk, oats, coconut, brown sugar, beaten eggs, golden raisins, chocolate chips, vanilla extract, and salt in a large bowl; mix well.
  2. Pour mixture into a 1.8-quart baking dish. Cover and refrigerate, 8 hours to overnight.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Bake in the preheated oven until edges are firm and center is still slightly soft, about 45 minutes. Stir before serving.
  5. I cooked my oatmeal for 45 minutes and it was definitely fully cooked. It was a little milky in the very center. When I stirred, the oatmeal was perfect. If you let it cook until a knife comes out clean, then the oatmeal will be overly dry.
  6. Add/exclude ingredients to you and your family’s personal tastes.

This is a great recipe to use as a jumping off point. I scaled to 5 servings as I had 1 1/4 cups of rolled oats. I didn’t have coconut so I added 2 diced apples in the morning, I omitted the chocolate chips and added 1 tsp cinnamon. Mine baked in 30 minutes, the milk was totally absorbed, softer in middle and firmer at edge. I still felt it was missing something, maybe next time use maple syrup for brown sugar or maple extract for the vanilla. I made this recipe for the Allrecipe Allstars Canada March challenge #10aday
