A mango lassi is a favorite of everyone, right? But why not try a banana lassi if you don’t have any decent fresh mangos or can’t get mango puree? Because they were so wonderful and they didn’t have any mangos at the time, I bought two at a restaurant in Udaipur. What a find!

Ingredients
- 3 ½ cups milk
- 2 cups old-fashioned oats
- 1 cup sweetened coconut
- ½ cup packed brown sugar
- 2 eggs, beaten
- ½ cup golden raisins
- ⅓ cup semisweet chocolate chips
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
Instructions
- Combine milk, oats, coconut, brown sugar, beaten eggs, golden raisins, chocolate chips, vanilla extract, and salt in a large bowl; mix well.
- Pour mixture into a 1.8-quart baking dish. Cover and refrigerate, 8 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until edges are firm and center is still slightly soft, about 45 minutes. Stir before serving.
- I cooked my oatmeal for 45 minutes and it was definitely fully cooked. It was a little milky in the very center. When I stirred, the oatmeal was perfect. If you let it cook until a knife comes out clean, then the oatmeal will be overly dry.

This is a great recipe to use as a jumping off point. I scaled to 5 servings as I had 1 1/4 cups of rolled oats. I didn’t have coconut so I added 2 diced apples in the morning, I omitted the chocolate chips and added 1 tsp cinnamon. Mine baked in 30 minutes, the milk was totally absorbed, softer in middle and firmer at edge.
