Grandma’s Homemade Granola

One day, my grandmother and I came up with this homemade granola recipe. The rest of my family, including my other grandma, who used to dislike granola, now adores and requests it! My preferred methods of serving it are either in a dish with milk or with coconut Greek yogurt. It’s both easy and fantastic.

Ingredients

  1. nonstick cooking spray
  2. 4 cups old-fashioned oats
  3. 1 ½ cups chopped pecans
  4. 1 ½ cups slivered almonds
  5. 1 cup coconut flakes
  6. ½ cup vegetable oil
  7. ⅓ cup packed brown sugar
  8. ⅓ cup honey
  9. ¼ cup maple syrup
  10. 2 teaspoons ground cinnamon
  11. 2 teaspoons vanilla extract
  12. ¾ teaspoon salt
  13. 2 cups dried cranberries (Optional)

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray.
  2. Mix together oats, pecans, almonds, and coconut in a large bowl. Set aside.
  3. Combine oil, brown sugar, honey, maple syrup, cinnamon, vanilla, and salt in a medium saucepan over medium heat. Stir gently until mixture begins to boil; remove from heat. Pour over oat mixture and fold together until dry ingredients are well coated. Spread granola onto the prepared baking sheet.
  4. Bake in the preheated oven for 20 minutes. Stir and continue to bake on the top rack until golden, about 5 minutes more. Remove from the oven and let cool for 20 to 30 minutes.
  5. Toss cooled granola with cranberries. Store in an airtight container.

I had only 1 cup of pecans so I added 1/2 cup raw pumpkin seeds. Also didn’t have any cranberries so I used chopped dates. Fabulous, tasty and crunchy. We love it.

Substitute vegetable oil (unhealthy) with coconut oil (none flavored one) and didn’t bake as long being I don’t like it so dark & hard it can brake a tooth. 🙂 otherwise a good recipe

Cooking time too long. Good recipe but comes out too dark with 20 / 5 minutes in the oven. 12 minutes then stir and 5 more worked great
