This quick and simple cheese sauce recipe was given to me by my mother-in-law. Besides her son, it’s the nicest gift she’s ever given me.

Ingredients

  1. 1 cup rice flour
  2. 3 large eggs
  3. ½ cup almond milk
  4. 3 tablespoons white sugar
  5. 1 pinch salt
  6. 1 cup warm water
  7. 3 ½ tablespoons coconut oil, divided

Instructions

  1. Whisk rice flour, eggs, almond milk, sugar, and salt together in a large bowl until well mixed.
  2. Combine water and 3 tablespoons coconut oil in a separate bowl until well blended. Whisk into the flour mixture. Pour batter through a sieve into a clean bowl; cover with plastic wrap and refrigerate for 1 hour.
  3. Heat remaining coconut oil in a griddle over medium heat. Ladle a portion of the batter into the pan and spread out. Cook until set, about 30 seconds per side. Repeat with the remaining batter.
  4. Coconut palm sugar may be used in place of the white sugar.

I thought this was delicious! The only ingredient change I made was I substituted the rice flour for gluten-free all purpose flour . I did not have any rice flour. In the directions, I did not refrigerate for an hour or strain it and I still loved it. This is a keeper for me.

Excellent! I made a half batch using two small eggs. Using one-quarter cup of batter, I got six, 9-inch crepes. Thank you for the recipe.
