Ingredients
- 1 ⅓ cups brown rice flour
- ⅔ cup sorghum flour
- ¼ cup dark cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 2 cups shredded zucchini
- 1 cup soy milk
- 2 eggs, beaten
- ½ cup water
- ¼ cup vegetable oil
- ¼ cup honey
- cooking spray
Instructions
- Preheat waffle iron according to manufacturer instructions.
- Stir brown rice flour, sorghum flour, dark cocoa powder, baking powder, and cinnamon together in a bowl.
- Whisk zucchini, soy milk, eggs, water, oil, and honey together in a separate bowl; add flour mixture and whisk together until evenly moistened.
- Prepare the surfaces of the waffle iron with cooking spray. Ladle 1 cup of the batter into the waffle iron, close lid, and cook until you have a crispy brown waffle, about 5 minutes. Repeat, applying more cooking spray between waffles, until all batter is used.

I agree w other reviewer saying they’re too soft. I cooked them extra long on purpose but they were still too soft. Tasted good though, especially w choc chips and whipped cream.
These turned out really well, but were best with chocolate chips! The kids loved the chocolate Mickey Mouse waffles for dinner, and I was happy for them to get a little green in there too. Used almond milk and a GF flour blend.
This is a great way to hide some veggies in my kids’ breakfast. They also can be “double-chocolate” waffles with some chocolate chips thrown in. The only issue I have is that the author didn’t advise if the zucchini have to be squeezed. Without that the waffles are way too soft. I add 1/4 to 1/3 cup tapioca starch to get that crispiness that we expect from waffles and make up for extra fluid from the shredded zucchini. Also I used unsweetened flax milk and rice milk in place of soy. This recipe is a keeper! Thank you!
