Most excellent grilled cheese! For National Grilled Cheese Sandwich Day on April 12, this was developed. You’ll think twice about your next grilled cheese sandwich after making one with garlic butter, hot or mild giardiniera, spinach, tomatoes, and 4 different kinds of Italian cheeses!

Ingredients

  1. 8 cups old-fashioned rolled oats
  2. 4 cups all-purpose flour
  3. 3 cups brown sugar
  4. ½ cup white sugar
  5. 1 tablespoon salt
  6. 1 tablespoon ground cinnamon
  7. 1 ½ teaspoons ground cloves
  8. 1 ½ teaspoons ground ginger
  9. 2 cups vegetable oil
  10. 1 cup honey
  11. ¾ cup molasses
  12. 4 eggs, beaten
  13. 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9×13-inch baking sheets.
  2. Mix oats, flour, brown sugar, white sugar, salt, cinnamon, cloves, and ginger in a large bowl. Stir in oil, honey, molasses, and eggs. Mix until well-combined. Pat mixture onto baking sheets using your hands.
  3. Bake in the preheated oven until edges begin to brown and center no longer looks glossy, 15 to 20 minutes.
  4. Cool for about 10 minutes; cut into bars while still warm.

I am only giving 4 stars because of changes I made to have the bars healthier than the recipe. I used about half the sugar and thought they were nicely sweet. I added about a cup total of wheat germ, ground flax and sunflower seeds to add some fiber and texture to the cookies. I like cookies like this with extra spice, so doubled the ones in the recipe. No raisins, but I used cranberries instead. I used these as a snack for about 25 people working on a project, and all I got back was a towel with a few crumbs. They loved the bars, and I loved how easy they were to put together. I know, it sounds like I am inventing my own recipe. I am not. I am taking a very good recipe and adapting it to make it healthier for people who have health issues. Thanks for a great bar. I will be making it again.

Looking for an alternative flavor to the oatmeal raisin bars I already make so the gingerbread caught my eye. Thought as I read it that it was a lot of sweetness and it is. Made the mistake of halving the recipe to try it and putting it in a slightly smaller than 13 x 9 pan to fit in my toaster oven- took almost double time to cook and still a bit wiggly in center. I will tweak the sugars, liquids and flours to make more healthy and nutrient packed and report back!

I quartered this recipe to test it out yesterday. I used some whole-wheat flour instead of all AP and added raisins and nuts to bulk it up a bit. It was super-easy to make and smelled amazing while baking. After looking at a few other recipes, I decided to line my baking pan with parchment and grease it. That meant it was really easy to lift the bars out of the pan. I cut them after cooling for about 15 minutes. They’re still nice and chewy today too. A bit heavy on the molasses so I will cut that down further next time I make them. Stored them in a Tupperware and wrapped some up to freeze too. Thanks for the recipe; I can’t wait to try it with different fruit/nut combinations!
