Fluffy Flapjack Pancakes

One of my specialties is this dish. When I was twelve, I cooked this recipe. You can use potato in place of the sweet potato by substituting cow’s milk for the coconut milk. To give it more taste, you can either prepare it as directed or add your favorite herbs and spices.

Ingredients

  1. 2 cups all-purpose flour
  2. 3 tablespoons white sugar
  3. 2 teaspoons baking powder
  4. 1 teaspoon baking soda
  5. ½ teaspoon salt
  6. 2 cups milk
  7. 2 eggs
  8. ¼ cup canola oil
  9. cooking spray

Instructions

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl until no lumps remain. Add milk, eggs, and oil; whisk until batter is runny and smooth.
  2. Heat a nonstick griddle over medium heat and lightly coat with cooking spray.
  3. Working in batches, ladle a generous 1/4 cup batter for each pancake onto the preheated grill and cook until bubbles appear, 3 to 4 minutes. Flip and cook, pressing middle gently with the spatula, until bottom is lightly browned, 2 to 3 minutes more. Repeat with remaining batter.
  4. You can make this with all-purpose flour or whole wheat flour.
  5. Use dairy-free milk substitutes or water in place of milk if desired.

This was easy to put together. I could tell by the liquid to dry ratio that they would be way to runny for our family so I dropped the milk to 1 3/4 c. I think I could have dropped it more, but for the time being we enjoyed these. I used olive oil due to the fact my Hubby seems to have this obsession with it right now. These came out great.

I tried these as per recipe, turned out excellent. I tried again without sugar for my toddler and worked well too. After flipping over, I just add bananas and berries. Must try if you have a fussy eater at home!

Noticed that others weren’t getting fluffy results. I always sift the dry ingredients together first. The instructions say to mix the batter until it’s thin. I really think you should be gentle with the batter and allow some lumps. When the batter starts to bubble, gently scoop it and place it in the pan. You have to use the batter right away, or your pancakes will be flat. Also sub’d 2T melted butter for 1/4 c. of Canola. Vanilla would be a nice addition.

I made an account just to leave this one star. It is by far the worst flapjack/pancake recipe that I have tried. The batter is too runny to work for flapjacks. I tried to make pancakes (crepes) instead. It also does not work. Do yourself a favour and find any other recipe to try.

I made the exact recipe. They were certainly not fluffy but flat and plain. My Grandsons (teenagers) left them on their plates after one bite! I agree with the commentor who said she uses sour cream–yes, so do I! The photo shows kind of fluffy but not actually how they come out.
