Ingredients
- 1 tablespoon butter
- ¼ cup chopped onion
- 4 eggs, beaten
- ¼ cup chopped tomatoes
- 2 tablespoons crumbled feta cheese
- salt and pepper to taste
Instructions
- Melt butter in a skillet over medium heat. Saute onions until translucent. Pour in eggs. Cook, stirring occasionally to scramble. When eggs appear almost done, stir in chopped tomatoes and feta cheese, and season with salt and pepper. Cook until cheese is melted.

Love it, and this is now one of my go-to “better than just a boiled egg” breakfasts. Now I like to caramelize the onions and add mushrooms or sub the feta for goat cheese. Every time I reheat it at work, someone comes over to ask what I’ve got for breakfast!

Loved this breakfast discovery!! Took advice from another reviewer; sautéd tomatoes and onions FIRST until soft before adding the eggs. Also – and to me, a must – a dash or two of oregano to the beaten eggs (before adding to the pan for scrambling). Amen! I might never eat regular scrambled eggs again! Delicious! Thank you!

Eggs turned out good. I’m not crazy about scrambled eggs but I wanted something different today. Followed recipe exactly and it was good but needs more feta cheese so next time I will double the amount.
I will make this again and again. I used green onion (because it only called for a small amount of onion) and spinach. I sauteed the spinach along with the onion.
Really good recipe, I’m not a fan of feta but my family enjoyed it.
I added 3 tbsp of feta cheese and parsley. Love the flavor. I am going to try this with caramelized onions next time.

We substituted green onions for the regular onions. We added fresh thyme, fresh garlic, cheddar cheese & swiss cheese, both grated. Very good! Will make it again.

Yum! To make fluffier eggs, use a little water, works better than milk. and since tomatoes should never be refrigerated before cooking why heat them at all? Toss in at the last minute so they don’t weep.
This recipe looked good on paper, but as usual, before putting on the menu in my restaurant, I made it for the family, their reactions varied from “not good” to disgusting.
Guests really enjoyed this – I added in a bit of milk, and used cherry tomatoes as someone else had suggested.
I want to make a different scrambled eggs. So i found this and it was scrumptious. But instead of onions (because I don’t like them that much)I used leeks. Also I was out of tomatoes, so I used salsa instead. I included mushrooms because I love them in my eggs. The recipe was awesome!
I wasn’t sure if I would like feta in my eggs but it is awesome. This recipe is definitely a keeper!
Very good!!! We added fresh bacon in with the eggs and mixed fresh parsley in before serving and both additions made it more hearty and beautiful to look at. Very easy to make and delicious. Definitely will make again… Excellent use of leftover feta!
