Ingredients
- 1 ½ cups all-purpose flour
- 1 tablespoon sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup eggnog
- 2 tablespoons clarified butter
- 1 egg, lightly beaten
Instructions
- Heat a lightly oiled skillet or griddle over medium heat.
- In a bowl, mix the flour, sugar, baking powder, and salt. Make a well in the center, and pour in the eggnog, butter, and egg. Mix until dry ingredients are evenly moist.
- Pour 1/4 cup batter onto the hot griddle for each pancake. Cook pancakes until bubbly on top. Flip with a spatula, and continue cooking until lightly browned on bottom.

These are delicious. I didn’t have eggnog, so I made a quick version – 3/4 cup half & half, 2 eggs, some sugar and vanilla. As other reviewers suggested, I added cinnamon and nutmeg to the batter, and more milk until the consistency seemed right. They came out fluffy and beautiful and tasted great.
Like everybody else, I had leftover eggnog from the holidays. So far, I have made cookies, and today, I made these pancakes. I followed other comments for adding milk, cinnamon, and nutmeg. For my own addition, I added a tablespoon of rum! These were delicious and will make them for my family when they are here next Christmas 2022

Delicious pancakes! The batter was too thick with the above proportions so I added more eggnog until it was a good consistency. This ended up working out even better to give it more of an eggnog flavor! I used melted butter and even added butter to the pan which gave a wonderful flavor and crispy-edge finish to the pancakes. You just have to cook it on a less than medium heat to see that it doesn’t burn. Since it is Christmastime I also added All Spice to the dry ingredients. It was a big hit with the family!
I think the batter was WAY too thick. I added more eggnog and it was fine. Traditional pancakes use one cup of milk (or buttermilk) for one cup of flour, and 1.5 cups of eggnog is the right amount for 1.5 cups of flour. I also added a teaspoon of cinnamon and a dash of nutmeg. After making these changes, the pancakes were quite good.
Not so great, the batter was so thick I could not spoon it into the pan. I added at least 3/4 of a cup of milk to the batter and I still had to flatten it in the pan. The eggnog flavor was really light, if your making this recipe add additional eggnog spices. I don’t recommend this recipe.
ok these are very good however you do need to add at least 1 more cup of nog and another cup of either water or milk to get a pancake consistency. Without the extra fluids it comes out as more of a puffed up cake
They weren’t the best pancakes. I had to add milk to get it the correct consistency, I tasted the batter and there wasn’t any flavor. I added pumpkin pie spice which gave it a holiday feel. The cooking time and fluffiness was great! There was no eggnog taste when eating it but there was a aftertaste of eggnog and pumpkin pie spice.
Makes delicious pancakes!! I changed up the recipe a bit, using 3/4 cup of eggnog, 1/4 cup of water, 2 tablespoons of melted butter, and added an extra egg. Was still a little too thick, so I just added a bit more water until it was the correct consistency.
Followed the recipe and they were thicker than the consistency for cookie dough. Took 3x the amount of liquid (eggnog + milk) and another egg to make them runny enough to pour. I would say I’d have been better off winging it than staying with this recipe.
Instructions incomplete. Should the butter be melted first? My daughter, who is not a cook, ruined a batch by putting in cold butter.
I noticed that the consistency was to thick so i had to add 1/2 c more of milk , as i didn’t have any eggnog. But otherwise very good. Next time i’ll make sure to hid the eggnog from my kids…lol
Way too thick, I thinned them out and they still burned. I turned the batter into waffles and they were just OK.
These pancakes were very light and fluffy, no problem with the batter being too thick, I scaled to 8 servings which yielded 10 pancakes with my 2 oz scoop. Unfortunately, they don’t taste like eggnog, even though I added 1/4 tsp of nutmeg as well, but they are good none the less.
These were a great way to clear out the Eggnog from the fridge.
I’ve made this several times in the past three months. Each time I’ve done it a little different, depending on which eggnog I have on hand. Regular eggnog pancakes are ok but add1/2 to 1 tsp nutmeg. Now that I discovered that there is pumpkin eggnog out, I’ve been making pumpkin eggnog pancakes. I add 1 tsp vanilla and 1 tsp pumpkin spice to make it taste more like pumpkin
I made like the recipe called for didn’t clarify butter added a splash of milk to loosen the batter alittle. Cooked on griddle at 325°. Came out light and fluffy. Could faintly taste the eggnog which was a surprise. Very delicious. Quick easy pancakes.
I have a feeling I messed up with the butter, how does the clarification of butter make them better? They were crazy thick I put tons more milks and eggnog in, and added some vanilla, cinnamon, and nutmeg. They tasted fine but were really dense. Could have been my fault though
These tasted great, but mine needed a bit more egg nog to thin out the batter. As written it was just shy of a dough.
