Easy Malted Waffles

This simple lamb leg recipe with garlic and fresh rosemary is delicious and easy to make. It’s ideal for dinner on Easter!

Ingredients

  1. cooking spray
  2. 2 cups all-purpose flour
  3. 5 tablespoons malted milk powder
  4. 2 tablespoons corn meal
  5. 2 tablespoons white sugar
  6. 1 ¼ tablespoons baking powder
  7. ½ teaspoon salt
  8. 2 cups milk
  9. 2 eggs, beaten
  10. ¼ cup butter, melted
  11. 1 tablespoon vanilla extract

Instructions

  1. Preheat a waffle iron according to manufacturer’s instructions. Spray the inside of the waffle iron with cooking spray.
  2. Stir flour, milk powder, corn meal, sugar, baking powder, and salt together in a bowl. Whisk milk, eggs, butter, and vanilla extract together in a separate bowl; pour into flour mixture and stir just until batter is combined.
  3. Pour batter, working in batches, into the preheated waffle iron and cook until golden brown, about 5 minutes.
  4. If you’d like to make it healthier, feel free to substitute Smart Balance 50/50 Butter Blend for the butter, and Splenda blend for the sugar. It turns out great either way.

We loved this recipe. Truly easy to mix up and cook. The corn meal gives a great addition to the texture of the waffle. Did not make any changes to the recipe though in the future we may add more malt powder. This will be the go to recipe for easy breakfast or dinner.

I have made this recipe three times, with rave reviews. I only took one star off because I would like the waffles to be a little stiffer, not as soggy, without having to cook them as long. I think the suggestion to add a little more flour and malt might be what I try next. However, all of our grandchildren love them , love the taste! And we bought a Mickey Mouse waffle maker so we are in Disney heaven, keeping our vacation memories alive.

These are pretty good! I used heaping tablespoons of malted milk and added two more (for a total of 7). I am considering adding another the next time I make it, but am unsure. The malt flavor definitely came through and I don’t want to overdo it. I also subbed 1 tbsp of brown sugar for white sugar, based on some other recipes I read.

I’ve tried several waffle recipes, and my family just wasn’t happy with any of them. However, this is now our go to recipe. They are light, fluffy, crispy, and filling. The one thing we’ve noticed is that they get soft if you store them overnight after cooling. However, pop them in the toaster, and they crisp back up and are just as tasty. 5 stars from each of my kids!

I’ve been looking for a simple and tasty way to make waffles at home. These were good, although not as fluffy as the Meijer brand malted waffle mix. I admit, though, that I did NOT cook them for five minutes, only until the light on the waffle griddle went out… so that is something to try when I make them again. I may add some extra flour and malt, as another reviewer mentioned doing. All in all, a good, easy, recipe.

The malt is nice to add to the waffle. I also had to add a little more malt for taste and a 1/4 cup of flour to give them a bit more volume. Good, but not stellar.
