Easy Flourless Banana Flax Pancakes

I’ve been playing a lot with flourless pancakes and recently came up with this recipe. These are my favorites so far! They taste best with maple syrup and, if you have any on hand, a dollop of whipped cream on top. Before eating these pancakes, my kids enjoy to use cookie cutters to form shapes out of them. Enjoy!

Ingredients

  1. 1 ripe banana, mashed
  2. 2 tablespoons ground flax seeds, or more to taste
  3. 4 eggs
  4. 1 teaspoon baking powder
  5. ½ teaspoon ground cinnamon
  6. 1 tablespoon butter

Instructions

  1. Mix banana and ground flax seeds together in a bowl. Add eggs, baking powder, and cinnamon; beat together until combined.
  2. Melt butter in a skillet over medium heat. Drop small spoonfuls of batter into the skillet. Cook until bubbles form and edges look dry, 4 to 5 minutes per side.
  3. These pancakes will be very thin. Dollar-size pancakes work best. You can make this recipe without flaxseed meal and the pancakes will still hold together.
  4. You can also cook these on a griddle heated to 325 degrees F (165 degrees C).

We love this recipe and have been making it for years. It is time consuming as it takes a while for the pancakes to cook but it’s worth it. I started making this for me and making regular pancakes for everyone else until they discovered mine and now I just make this for the whole family. I let the batter sit for a bit to give the flax time to gel. I also sometimes substitute coconut oil for the butter to make it dairy free. It is a bit eggy and I can see why some people might want to reduce the amount of eggs but we enjoy it as written. Give it a try!

Recipe as written is great! I wouldn’t change a thing. It’s a great alternative to traditional pancakes that do not agree with my stomach. Although thin, I made several, stacked them to the thickness of a regular pancake and enjoyed them just as much as a regular pancake.

I only used 2 eggs in this recipe, added 2 tablespoons of ground flax seed, and a dash of nutmeg. They tasted phenomenal. I will definitely make them again. My boyfriend is on a keto diet and we had been searching for a decent pancake recipe. This is the first one we’ve tried that will get made more than once!

These were almost like a crepe batter at first. After allowing the flax to gel, they came out more like a pancake. They are pretty tasty. Thank you for the recipe.
