Ingredients
- cooking spray
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 bunch green onions, chopped
- 8 large eggs
- 2 ¾ ounces fully-cooked bacon pieces (such as Oscar Mayer®)
- ¼ cup whole milk
- 1 pinch garlic powder, or to taste
- 1 pinch onion powder, or to taste
- salt and ground black pepper to taste
- ½ (8 ounce) package shredded mild Cheddar cheese
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin with cooking spray.
- Place bell peppers and green onions into a large bowl. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper. Sprinkle Cheddar cheese into the bowl and whisk until incorporated. Pour mixture equally into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes. Let cool slightly before serving.
- You can use any shredded cheese you’d like.
- You can cook and chop fresh bacon instead of using precooked.

Adapted to use egg whites (10 instead of 8) and swapped in leftover breakfast sausage + sautéed mushrooms and spinach. These were beautifully done and fluffy after about 20 minutes. Freezing half.

I made a half batch. Very tasty. Substituted ham for bacon and added chives. I didn’t spray the muffin cups well enough so some stuck to the sides, but got a thumbs-up from the hubby.

I made these for a friend’s family breakfast and the 6 & 8 year old didn’t like them. They are not picky eaters. I made them with turkey bacon and no peppers to be more kid friendly. Two thumbs down from the kids unfortunately. I think for adults these might be nice with spinach and feta.
I’ve made these several times now, and they are delicious! I substitute ham instead of bacon, and don’t use green pepper, but that is just our personal preference. I gave this recipe 5 stars not only because they are so tasty, but because it is so versatile in that you can add whatever you like.

Made it with condensed milk because I didnt realize I had no milk. It was a little sweet but very good. Even good warmed up. 2nd time, once again no milk I used coffee creamer and chicken instead of bacon and it was delish too
This recipe is great! They were easy to make and I froze the leftovers. They are great to take one out of the freezer and heat up for an easy and low calorie breakfast before work with some fruit on the side. I will be making these again for sure.

I cooked and diced my own bacon. I used three different bell peppers (red/yellow/orange) diced up. I shredded half a block of Garlic Jack cheese. super easy to wrap up and take to the office for quick warm up in microwave (30 seconds!) Better and cheaper than Dunkin Donuts
I did substitute a few things like egg whites for two of the eggs. I used sausage, some spinach, leftover asparagus, yellow pepper ( I don’t particularly like red pepper) & sharp cheddar. Basically just cleaning out the fridge. Still delicious!
Liked it and they are very handy for work mornings. My only complaint is that the texture is not smooth like the ones that you buy.
I used mushroom and turkey sausage and added ~1tsp baking powder for fluff. Taste great & super easy to make
I’m so glad I found this recipe. I impulsively decided to make egg muffins for the work week with what I had on hand. This is a very adaptable recipe. I had eggs, spinach, dried onions, (dont jugde LOL) left over butter milk from baking and parmesan cheese. I added 1TB Mrs Dash, salt and fresh ground pepper. I followed the measurements with my substitutes. They turned out perfect, and tastey. I sure if you made it to your tastes you will very happy with it.
For my granddaughter I made these using only egg, fried bacon, and cheese because I knew she wouldn’t like the other ingredients (although I plan to make some for myself, following the recipe.) WOW! She loved them (middle schooler); and it occurred to me how great these would be for kids AND adults on the run. I put leftovers in a ziplock bag in the refrigerator. They rewarm in the microwave wonderfully. Think is a keeper.
Sorry no photo but I’ve been making these for years!! Thought I’d made up this recipe on my own!! Great thing about these you can add anything you want to these (meat,cheeses,veggies,spices ect) they work great as a grab and go or cook some biscuits for easy breakfast sandwiches!! YUM they refrigerate well for making ahead and just microwave them!!! Enjoy
I baked some of it just as it was and to the rest I added hash browns. My husband and daughter loved them and, God willing, I will make them again. The pic is of the leftovers. 6 left out of seventeen made. I served them with buttered Walmart sliders halved and browned in the air fryer and fruits.
Substituted cheddar cheese with mozzarella & grated Parmesan & used spinach instead of red & green peppers. Tastes so good & it’s super easy to make. I’m going to make this again for sure.
