Ingredients
- 2 cups grated zucchini
- 1 (9-inch) pie shell, unbaked
- 6 eggs, beaten
- 1 cup shredded Cheddar cheese
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Spread grated zucchini on the bottom of the pie shell. Pour beaten eggs over zucchini and top with Cheddar cheese.
- Bake in preheated oven until eggs are set, about 30 minutes.

Absolutely the easiest and tastiest zucchini quiches I’ve have ever made.
I have a favorite spinach quiche recipe that uses a 1.4 oz package of vegetable recipe mix for the seasonings. I needed to use our always plentiful zucchini’s and wanted a zucchini quiche recipe. This fit the bill and the veggie recipe mix added the seasonings needed to make this an excellent option while still keeping it truly simple! I also use Swiss cheese instead of the cheddar.
This is super easy. I didn’t squeeze the liquid out of my zucchini and it took over an hour to set. I think next time I’ll try that to see if it cuts down on the cook time. I did add some ham, salt, pepper and garlic powder. This one will go in my favorites.
Nice and easy. I grated onion into the zucchini, no need to sauté. Added lots of flavor, also added cheese into mixture and poured eggs over.
It was easy to make. I made for my wife for dinner and we both loved it. The next time I will add additional yellow squash, fresh garlic, and maybe some broccoli. But this dish will definitely stay in our lineup.
I added salt and pepper to the eggs before whisking to add some flavor.
I love this recipe because it provides the basis for adding a variety of additional ingredient combinations. I use whatever I have on hand and if I am adding ham, onion, bell pepper and/or sliced black olives, I sauté that in a little butter before adding to quiche for a little extra flavor. The cooking time is increased to about 50-55 minutes.
This is a great basic recipe. As others have said, it needs a little dressing up (INMO). I did as someone else suggested and sautéd a little garlic and shallot and added it. I also mixed the zucchini and about a third of the cheese in the eggs before I put it in the pie shell. Also, salt and peppered it. It came out amazing! I plan to use the same ratios to try mushroom and parmesan!
Great recipe for a first time quiche maker. Just added some salt in pepper with the first pie crust and added some salt, pepper, and garlic powder to the second. Both are delicious and definitely being added to the breakfast rotation.
My family enjoyed it tremendously. However like everyone else I added salt, pepper and mrs.dash. It was very flavourful. The next time I will add onions. But its a great quick meal.

I add onions and a small chopped hot pepper. I add the cheese and then pour the eggs over all. My family loves it and it’s super easy to make.
I wondered if I should add salt. Didn’t seem to need it. Unbelievably easy. Husband loved it.

This was really good but I hate to rate something that I made changes to. I used the basic recipe but decided to add some mushrooms and half an onion sauteed in a little butter to the zucchini and egg mixture. Then I put a sliced garden tomato over the top of that mixture before covering with the cheese. It was really quick to put together and tasted great. I would make it again the same way.
The previous reviews are correct, this is a good basic recipe. I added sauteed onions, bacon and sun-dried tomatoes. With those additions the quiche was great. I also recommend you remove some of the moisture from the zucchini.
I added onions, salt and pepper. Turned out great but it took an hour to completely cook.
Ehh. I added salt and pepper, bacon bits and more cheese and eggs. Still was pretty mediocre, in my humble opinion.
I have not made this recipe yet, but with all the zucchini on the market, this looks to be an answer to My prayers.
