Ingredients

  1. 1 ½ cups milk
  2. ½ cup quick cooking oats
  3. 2 tablespoons white sugar
  4. ¼ teaspoon ground cinnamon
  5. 1 pinch ground nutmeg
  6. 1 pinch salt
  7. ¼ teaspoon lemon zest (Optional)

Instructions

  1. Combine milk, oats, sugar, cinnamon, nutmeg, and salt in a saucepan. Add lemon peel, if using. Bring to a boil, stirring constantly for 2 minutes.

Yum! I added 1Granny Smith Apple peeled, cored, and in 12- inch dice. I also doubled the cinnamon and did half regular sugar and half brown sugar. Served it topped with chopped walnuts. I will use this again! I did not feel like it lacked flavor.

Delicious! Perfect oatmeal. Nice and light, with just enough flavor. I made it according to the recipe, but substituted unsweetened plain almond milk for milk. Next time I’m going to try adding 1-2 tsp cocoa, as one reviewer suggested, and then possibly try sweetening with honey instead of sugar.
