Delicious Buttermilk Pancakes

I’m not usually a fan of cupcakes, but this is my favorite recipe! I’ve made it numerous times, and everyone enjoys it.

Ingredients

  1. 1 ¼ cups all-purpose flour
  2. 1 ¼ cups buttermilk
  3. ¼ cup white sugar
  4. ¼ cup vegetable oil
  5. 1 large egg
  6. 1 teaspoon baking powder
  7. 1 teaspoon baking soda

Instructions

  1. Preheat a skillet over medium heat.
  2. Combine flour, buttermilk, sugar, oil, egg, baking powder, and baking soda in a blender. Purée until smooth.
  3. Pour batter onto the hot skillet to form 5 pancakes. Flip pancakes when edges appear to harden. Flip pancakes; cook until the bottoms are golden brown.

Turned out great! Took the advice from the comments and substituted 2 tbs of butter for oil, switched powdered buttermilk for buttermilk (keeps longer), and let the blender run to smooth. These are staying on the menu.

What a buttermilk pancake should be! Classic taste and very fluffy…. I prefer thick pancakes so this recipe is great. Two things I do differently: (1) I add 1/8 cup more buttermilk so the batter flows easier and still have thick pancakes. (2) I use a whisk instead of a blender and stop mixing when it has tiny lumps – the way I combine all my pancake batter. I’ve made these several times and we always freeze some for a quick breakfast or snack.

These pancakes were delicious! I made a few changes based on the reviews. Cut the sugar down to 2 tsp, added vanilla, salt, and cinnamon, and subbed 2 tbsp of melted butter for oil. We will definitely be making these again!

I used oatmilk instead and made half the recipe. Made three medium sized pancakes. Great basic recipe. I think I could also get by with a little less sugar due to the oatmilk. Great recipe! In the past when using milk I would make my own buttermilk with milk and vinegar.

About 8 years ago my wife and I wanted pancakes. Problem was we were out of our trusty Bisquick, the only type of pancake we’d ever made. It was let in the evening and we didn’t want to go out so I did a web search and stumbled onto this recipe. This recipe changed how we did pancakes forever. We never purchased Bisquick again and have made this exact recipe well over 100 times in the last 8 years. Truly a wonderful simple and tasty pancake.

i have to say i was very hesitant on trying this recipe. COMBINE IN A BLENDER?? That goes against almost every pancake batter recipe I’ve ever read. This recipe is SUPER EASY, AND the pancakes were AMAZING!! Def a keeper!

Delicious! I changed the flour to gluten-free, added about 1/2 cup more after mixing because I wanted them thicker. Used coconut oil instead of Vegetable oil. They were wonderful!

In my first experience with this recipe, I found the ratio of wet to dry ingredients created much too thick of a batter for uniform pancakes. I ended up thinning with milk. Next time I would cut the sugar in half, much too sweet. Great tasting pancakes.

Perfect pancakes. Just what we were hoping for. I added chunks of fresh bananas and chopped pecans for the most delicious pancakes we have ever had. No more pre made mixes for me!

Sweet simple, pancakes. I kept all the ingredients the same. The only thing I did differently was mix with a wire whisk. Yes, they are quite sweet. I would half the sugar next time.
