Traditional caramel monkey bread is given a sophisticated touch by chai spices. Rapid and simple. Warm is preferred.

Yield: 6 servings

Ingredients

  1. cooking spray
  2. 4 large Granny Smith apples – peeled, cored, and sliced
  3. 3 tablespoons white sugar
  4. ½ teaspoon ground cinnamon
  5. ½ teaspoon ground nutmeg
  6. ½ teaspoon ground cumin
  7. 1 tablespoon lemon juice, or as needed
  8. 2 cups plain soy milk
  9. ½ cup apple butter
  10. 1 teaspoon vanilla extract
  11. 1 teaspoon ground cinnamon
  12. ¼ teaspoon salt
  13. 12 (1/2 inch thick) slices soft-crust French bread

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Coat a baking sheet with cooking spray.
  2. Coat a nonstick skillet with cooking spray and heat over medium-high heat. Saute apples until softened, 5 to 7 minutes. Reduce heat to medium. Add sugar, cinnamon, nutmeg, and cumin and cook until tender, stirring occasionally, 5 to 10 minutes more. Stir in lemon juice and remove from heat.
  3. Blend soy milk, apple butter, vanilla extract, cinnamon, and salt together in a blender until smooth. Pour into a shallow bowl.
  4. Coat a nonstick skillet with cooking spray and heat over medium heat. Dip bread slices into soy milk batter, coating evenly. Cook in the skillet until lightly browned, 1 to 2 minutes on each side. Transfer bread to the prepared baking sheet.
  5. Bake in the preheated oven until golden brown, about 4 minutes.
  6. Place 2 slices of bread onto each serving plate and divide topping among servings.
  7. You can use any tart, firm apples you prefer.
  8. Use vanilla-flavored soy milk instead of plain, if preferred.

These were so yummy! My daughter loves French toast and my husband loves apple pie, so this was a big hit at our house!
