Ingredients
- nonstick cooking spray
- 3 eggs
- ½ cup cottage cheese
- ¼ cup milk
- 1 cup chopped cooked broccoli
- ½ cup shredded Colby-Monterey Jack cheese
- ¼ cup chopped red bell pepper
- ½ teaspoon garlic salt
- ⅛ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a jumbo 6-cup muffin tin with cooking spray.
- Combine eggs, cottage cheese, and milk in a blender or Vitamix. Blend on low speed to combine, 1 to 5 seconds. Pour mixture into a medium mixing bowl.
- Add broccoli, Colby-Jack cheese, and bell pepper to cottage cheese mixture; add garlic salt, and pepper. Stir to combine.
- Divide mixture evenly between the prepared muffin cups.
- Bake in the preheated oven until a knife inserted into the center of a quiche comes out clean, about 30 minutes.
- You can also make this using two 5-inch pie tins.
- Feel free to add cooked sausage, bacon, etc. One of my favorite combinations is chopped chicken, spinach, and mushrooms. I also love bacon, spinach, and broccoli. The cheese can also be interchanged.

Yummy. A double batch was 18 regular size muffin cups. I used silicone liners and the quiche popped right out! About 3-4 mini quiche made a serving.

I used spinach instead of broccoli. Added water instead of milk and added bacon. It was delicious.
need mini liners for the muffins! those all stuck! ended up putting in a mini loaf pan with parchment paper. used parsley, mushrooms, mini peppers, fresh garlic & onion minced. frozen shredded potatoes & italian breakfast sausage. turmeric in the mix & then paprika on top before baking.
These mini quiches are easy and pretty good, for a healthy twist on a traditional quiche.
I read the reviews n made a cpl of adjustments. But I LOVE this recipe!! Oddly I like quiche but don’t love too much egg, so I added lots of stuff so they were barely held together by the egg. I used broccoli, mushroom, onion n ham. To hold everything, I used about 1.5 of all ingredients. 6 eggs because they were small for being called large, and someone else said they might use 4 next time. And 1.5x the cheese, milk, spices, etc. I only had almond milk so that’s what I put in. I also added the 1/8 tsp cayenne that another person suggested. These were delicious, I’ve told my mom about them, n I’ll definitely make again!! Thanks for sharing the recipe!!
Doubled the recipe and made it in a cake pan (3 qt). Did not use the blender and cut out the cottage cheese and increased the shredded cheese. Added a package of green giant spinach cooked and drained, chopped mushrooms , baked at 350 for 30 min or so. Very good and makes an excellent make ahead breakfast. Freezes well too.

Made this recipe today and enjoyed it immensely. I followed the recipe exactly but next time might use four eggs.

This recipe came out great! The only change I made was to skip the blender step, since I didn’t want to dirty any more dishes than necessary. I’ll definitely make it again.
This recipe is easy and changeable for your personal taste. I had a can of green chilies and added that to the mix! Delicious & easy. No fuss for multiple mini quiche’s that were used for breakfast all week.
I just made this, thinking it might be something I could make for my elderly parents, but not really expecting much. Wow – what a surprise. Really light tasting and delicious. Now I can’t wait to make it again!!!
