Crescent Roll Breakfast Casserole

Ingredients

  1. 1 (8 ounce) package bulk pork sausage
  2. ½ (8 ounce) package Neufchatel cheese, softened
  3. 1 (8 ounce) package refrigerated crescent rolls
  4. 1 cup sharp Cheddar cheese, shredded
  5. salt and freshly ground black pepper to taste (optional)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Cook sausage in a skillet until browned and crumbly, 5 to 7 minutes. Drain. Add Neufchatel cheese and cook and stir until combined. Remove from heat and set aside.
  3. Unroll crescent rolls and place 1/2 of the rolls into an 8×8-inch glass baking dish. Make sure to press seams together. Top with sausage-Neufchatel cheese mixture and sprinkle with Cheddar cheese. Top with remaining crescent rolls.
  4. Bake in the preheated oven until golden brown, 20 to 25 minutes. Let cool 10 minutes before cutting into 8 squares.
  5. You can use cream cheese instead of Neufchâtel cheese. You can use spicy pork sausage and omit salt and pepper.

My daughter really likes to try new recipes. I’m usually not a breakfast person but this can be made for a snack, appetizer or a side dish. To be honest I didn’t think I would like it but it was absolutely amazing. Not to mention it was simple, cheap and quick which is always a plus. I think it tastes like biscuits and gravy. And another plus is the kids loved it as well.

Loved this recipe Yoly! And I was a tiny bit skeptical; a breakfast-themed bake with no eggs? But it was awesome! Must-must use the Jimmy Dean’s Hot sausage. I also used cream cheese due to convenience and availability and added a mix of sharp cheddar and shredded pepper Jack. While not needed, I also added a minced red bell pepper before it went bad and half a sweet onion to the sausage sauté. A hit at this household! Served with eggs cooked to order and side of salsa/hot sauce. Plan to double and make again for an upcoming Palm Sunday brunch we have. Thanks for sharing this!
