Cranberry Apple Oatmeal

The béchamel gives this fantastic sausage-mushroom lasagna a distinctive touch. To reduce the amount of fat in this meal, I like to use low-fat milk, part-skim mozzarella, and ricotta. The distinction won’t be apparent.

Ingredients

  1. 2 cups water
  2. 1 apple, cored and diced
  3. ½ cup fresh cranberries
  4. 1 cup quick-cooking oats
  5. ¼ cup brown sugar
  6. ½ teaspoon ground cinnamon
  7. ¼ teaspoon ground nutmeg
  8. 1 pinch salt
  9. ½ cup chopped walnuts

Instructions

  1. Combine water, apple, and cranberries together in a bowl; bring to a boil. Cook mixture until cranberries burst and apple is tender, about 5 minutes. Reduce heat to medium and stir oats, brown sugar, cinnamon, nutmeg, and salt into apple mixture. Cook, stirring continuously, until water is absorbed and oatmeal thickens, 2 to 3 minutes. Top oatmeal with walnuts.

Myself, 5yo, and 3yo all really liked this. We didn’t have fresh cranberries, but did have craisins, so we used a 1/4 of those, and almond milk instead of water, which was fine with the dried cranberries. I left out the nuts.

My 3-year-old likes it too! I subbed orange juice for about 1/4th of the water (1/2 c) and just used a dash of nutmeg. I also drizzled a tiny bit of maple syrup over the bowl before serving! Fast + delicious = make again material!

Delicious and tasty. I would add apple sauce next time to add some more flavour and natural sweetness. Also great for cold mornings.

Very good. If you don’t have a fresh orange, sub some of the water for orange juice. I cut way WAY back on the nutmeg (just a dash) and the sugar and nuts (too many calories).
