Crab Brunch Casserole

My mother-in-law gave me this recipe. On Christmas Eve, their family always had fish. With my own family, I continued the custom. Simply leave out that step if, like me, you’re not a fan of oysters. Use fresh ingredients instead of dry; this is the key. It’s totally worth the effort; my guests can’t get enough of it! Garlic bread is recommended.

Ingredients

  1. 2 eggs, beaten
  2. 2 cups milk
  3. 2 cups seasoned croutons
  4. 8 ounces shredded Cheddar cheese
  5. 1 tablespoon dried minced onion
  6. 1 tablespoon dried parsley
  7. 1 pound fresh crabmeat
  8. salt and pepper to taste
  9. ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
  2. In large bowl, mix the eggs, milk, croutons, cheese, onion, and parsley. Stir in the crabmeat. Season with salt and pepper. Spoon into the prepared baking dish, and sprinkle with Parmesan cheese.
  3. Bake 1 hour in the preheated oven, or until a knife inserted into center of the casserole comes out clean. Serve immediately.

Delicious! I followed the recipe exactly. Important to use lump crab meat. I would use less croutons and more crab meat next time.

I really enjoyed this recipe. Used imitation crab meat, since I didn’t have the real thing. It was very good. The only thing I would do different next time is maybe add more milk and another egg. Found it a little dry for my taste.

I used McIntosh Apples, we cored then sliced with my Mandolin very thin. sprinkled with cinnamon sugar and baked in my convection over at a setting of 275 degrees. I used parchment paper in my cookie sheets.They are perfect. OMG I can’t stop eating them. They are crispy and oh so good.

This was awesome. I made it for co-workers. After reading the reviews, I did decide to double the eggs. I brought in a tin of Old Bay in case people wanted to sprinkle some on top but otherwise made no changes to the originally posted recipe.

Wouldn’t it have been nice if original poster had shared this recipe and tell us how many servings are per recipe? I am extremely calorie counting conscious and it upsets me that I have no idea how many calories are in my 9 x 9“ glass pan.

This was a very good casserole that everyone liked. I made it exactly as described, but did add an extra egg as some reviewers suggested and was glad I did because it set up nicely. I do think it needed something else though to take it up a notch. Next time I will add old bay and maybe some cayenne pepper.

Added tsp ground dry mustard, used salt and pepper croutons, mixed cheeses I had then fresh parm on top before baking. I’ll make again if I buy lump crab from Seafood truck.

Everyone at a bridal shower brunch LOVED this! Modified to add an egg, but pretty much followed the recipe to the letter. Make sure to use herb seasoned croutons as most of the flavor will probably come from that. Also use lump crab meat if using canned. The white crab is so shredded you won’t be able to tell there’s crab in the dish.

I LOVED LOVED LOVED THIS RECIPE!! I am deathly allergic to crab so I used turkey instead. Instead of eggs i used butter and salt on the outside and i put the seasoned croutons INSIDE the cavity. I didn’t like the idea of cheddar cheese on my turkey so I replaced that with thyme. Instead of a casserole dish i put it on a roasting pan. Three hours later i had a great turkey i served for thanksgiving. Wonderful recipe.
