Ingredients
- 1 (16 ounce) package breakfast sausage
- 1 chopped green onion
- 2 cups shredded Cheddar cheese
- 6 eggs, lightly beaten
- 1 cup water
- ½ cup milk
- 1 (2.64 ounce) package country gravy mix
- 6 slices bread, cut into 1 inch cubes
- 2 tablespoons melted butter (Optional)
- ½ teaspoon paprika to taste
Instructions
- Preheat oven to 325 degrees F (165 degrees C). Grease an 11×8 inch baking dish.
- Brown sausage in a large skillet; drain fat.
- Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.
- Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving.

I served this at a company breakfast meeting, the only thing I did different was added hash browns to the layers and everyone loved it. Its easy to make and tastes Great.
What is it with the hash browns? That’s a totally different recipe. I think the beauty of this recipe is that the absence of potatoes makes it not like every other breakfast casserole. I made it as is and got rave reviews. It was a welcomed change.
Easy to make and loved by all. Placed cooked hashbrowns with 1/4 cup of cooked onion and handfull of mushrooms in the bottom of the pan with 1/2 of the sausage. Added the rest of sausage, cheese, french bread, then egg mixture on top of the hashbrown mixture. Placed in broiler for a few minutes after cooking to crisp up the bread. Lots of possibilities to expand the recipe.
This casserole was extremely easy to make and a crowd pleaser!! This served 10 people and it went fast! Yummy!!!
We love this recipe so much! We have always made it using hashed browns on top instead of bread, but otherwise stay with the original recipe. It’s become a Christmas morning tradition the past three years. Enjoy!
Yum. I did saute onions with the sausage. I used French baguettes. I had to bake an additional 5 minutes. Fabulous!!!!!!!!!!!
I made this dish yesterday and it was by far one of my favorite breakfast casseroles! The only thing I did different from the recipe was lined the bottom of my dish with frozen hashbrown patties and I needed to cook mine for one hour. The flavors were great and I’m glad I did put the hasbrown layer because it gave it a nice crust. Super easy to make and everyone loved it.
Such an awesome recipe! I did what others suggested and used hash brown patties to make a crust. Made the night before and used frozen patties that were able to thaw in the casserole overnight. Popped it in the oven in morning at 350 for 1 hour and it was perfect! We only had a few people eating it so had leftovers and they heated up great in the microwave.
Great easy recipe. I didn’t have sausage on hand so I used bacon, instead. Son, friend, and the dog loved it as much as I did. Thank you for posting it.
The cheese felt like a lot. Next time I make it I’m going to use half the cheese and put hash browns on the bottom as other reviewers suggest
Loved how the bread cubes were crispy on top! Definitely sprinkle the butter over them! I used hot Jimmy Dean sausage and the extra flavor was perfect!
This was amazing!!! You should have to make it “as is” to rate it! The only thing I did was use homemade stale bread, but bread is bread. Everyone here asked for more. I highly recommend. In the future I may try adding some extra veggies and/or skipping bread, but this recipe is fantastic just as it is! Thank you!!!
Good- I browned hash browns in pan & put layer of those down first, then sprinkled on top as well.
I followed directions exactly. It was good but the link sausage on the bottom was weird. I would use bulk breakfast sausage or bulk sausage of any kind if I made this again. And I would add whatever veggies or items you like normally in an omelet for your own personal taste. I would use this as just a base for your own ingredients on hand.
It turned out perfectly. I used ground sausage instead of links.
I used potatoes instead of the bread but all in all it is really good.

Good, but…Used hashbrowns on top and they overpowered everything else. Lighten up or skip entirely. Use French bread. Used wonder and wasn’t good. Use good amount of French bread. Add a couple extra eggs.
