Connor’s Sweet Cheese Crepes

This pie is my fave. It becomes sweet and raisin-flavored when raisins are added. I love it!

Yield: 6 crepes

Ingredients

  1. 1 ¾ cups milk
  2. 1 ½ cups all-purpose flour
  3. ¼ cup unsalted butter, melted
  4. 3 large eggs
  5. 3 tablespoons powdered sugar
  6. 1 ½ tablespoons vanilla extract
  7. 1 pinch ground nutmeg
  8. cooking spray
  9. 1 (8 ounce) package cream cheese
  10. 1 cup powdered sugar
  11. ¼ cup unsalted butter, softened
  12. 1 tablespoon hazelnut-flavored syrup
  13. 2 tablespoons chopped pecans, or to taste

Instructions

  1. Mix milk, flour, melted butter, eggs, powdered sugar, vanilla, and nutmeg for crepes together in a bowl.
  2. Spray a nonstick pan with cooking spray and heat over medium heat. Pour 1/4 cup crepe batter into the heated pan. Tilt and swirl the pan until batter evenly coats the surface. Cook until light brown on the bottom, about 2 minutes. Flip and cook on the other side for about 2 minutes. Remove to a plate and repeat to cook remaining crepes.
  3. Mix cream cheese, powdered sugar, softened butter, and syrup together in a bowl until smooth.
  4. To serve, fill each crepe with filling and pecans.
  5. Another good filling is yogurt and fruit.
