Cinnamon Raisin Stuffed French Toast

Ingredients

  1. 4 ounces cream cheese, softened
  2. 1 tablespoon white sugar
  3. ⅛ teaspoon ground cinnamon
  4. 8 slices raisin cinnamon bread (such as Pepperidge Farm®)
  5. 2 eggs
  6. 3 tablespoons milk
  7. ⅛ teaspoon ground cinnamon
  8. 1 teaspoon butter, or as needed

Instructions

  1. In a small bowl, mix together the cream cheese, sugar, and 1/8 teaspoon of cinnamon until thoroughly combined. Spread cream cheese mixture onto 4 slices of raisin bread. Top each spread slice with another slice of raisin bread to make 4 sandwiches.
  2. In a shallow bowl, beat the eggs with milk and 1/8 teaspoon of cinnamon. Dip each sandwich into the egg mixture on both sides.
  3. Grease a skillet with butter, and place over medium heat. Brown the sandwiches in the skillet for about 2 minutes per side.

This recipe is a good start, but can be better. With some changes, including cooking technique. For the custard I used 3 eggs and 3-ish tbsp heavy cream. To that I added vanilla bean, cinnamon and nutmeg. For the filing I used cream cheese, powered sugar and cinnamon. I soaked the cinnamon raisin bread really well in the custard mixture, poking holes in it with a fork to make sure it was worked well into the bread. I put two slices in the pan to cook over medium. When the bottoms were brown and the custard beginning to set, I flipped them and spooned and spread the stuffing on one slice then put the other slice cooked side down on top of the stuffed part. After it cooked through on the bottom I flipped it and finished cooking the top. I pulled it out of the pan and topped it with some homemade cranberry compote and a dash of the powered sugar. Cranberry compote was fresh cranberries, clementine juice, coconut sugar, pure cane sugar and water boiled down until it turns into a delicious syrupy compote.

I liked this recipe, but my husband said it was just ok. The only change I made was to add a little cinnamon, nutmeg, and orange peel to the filling and cinnamon, nutmeg, and vanilla to the egg mixture. I would give this recipe 4 1/2 stars if I could.

I used low-fat cream cheese, honey instead of sugar and I added vanilla extract to the egg wash. The kids thought this was great. Next time, I think I’d like to try this with sliced apples or pears in the “sandwich”.

My kids really liked this. I did make some changes tho. I used the cinnamon bread and the crm. cheese mixture but for the egg mixture i used another recipe. Mix together: 1/4 cup all-purpose flour 1 cup milk 1 pinch salt 3 eggs 1/2 teaspoon ground cinnamon 1 teaspoon vanilla extract 1 tablespoon white sugar I had leftover egg mixture so i just cooked it up like a blintz and spread some crm. cheese mixture on it and rolled it up. (It wasn’t too bad).

This is amazing as written, even better with a bit more cinnamon and a little nutmeg, but man… I made this with some homemade sweet vanilla challah and it was out of this world! For the vanilla challah, I also added some vanilla extract to the cream cheese mix and the egg mix. Yum!
