Chocolate and Peanut Butter-Stuffed French Toast

For lovers of both chocolate and peanut butter, this French toast with peanut butter filling is the ideal way to start the day!

Ingredients

  1. 3 large eggs
  2. 3 tablespoons milk
  3. 1 ½ teaspoons ground cinnamon
  4. ½ teaspoon ground nutmeg
  5. ¾ cup peanut butter
  6. 6 slices day-old bread
  7. ½ cup chocolate chips
  8. 2 teaspoons unsalted butter, or more as needed
  9. 2 tablespoons chocolate syrup, or to taste

Instructions

  1. Whisk eggs, milk, cinnamon, and nutmeg together in a large bowl and set aside.
  2. Spread a thick layer of peanut butter on one side of each slice of bread. Sprinkle chocolate chips on 3 slices of the peanut butter-covered bread. Top with 3 bread slices to form 3 sandwiches.
  3. Heat a skillet over medium-high heat. Melt butter in the skillet. Dip both sides of 1 sandwich in the egg mixture and place in the skillet. Cook until golden, about 3 minutes per side. Repeat with remaining sandwiches, melting more butter in the skillet if needed.
  4. Remove sandwiches from the skillet and slice diagonally to make 6 half sandwiches. Drizzle with chocolate syrup and serve immediately.
  5. You can spray the skillet with butter-flavored nonstick cooking spray instead of using butter, if preferred.
  6. Cook time will vary based on the thickness of the bread.

Wow, this is truly decadent, sweet and rich. I forgot to drizzle the chocolate syrup and I’m glad I did because it would have been way too sweet. Half a sandwich is still too much for one person. No one in my family could eat this for breakfast. It would make a good dessert if each sandwich was cut into quarters or smaller pieces. Thanks for sharing.
